Mexican Pizza Ingredients:
10 Flour Tortillas, Poked & then fried or baked
For the Taco Enchilada Sauce:
1 tsp oil
1/2 cup Onion, roughly cut
4 to 6 cloves of Garlic
1 big Tomato
4 to 6 giant mild chilies, dried
1/2 tsp Cumin seeds
Salt to taste
FOR THE REFRIED BEANS: (Instant Pot makes it easier to boil beans)
1/2 cup dry pinto beans, boiled & mashed
1 tsp oil
1 tsp garlic, minced
1/2 tsp cumin powder
1/2 tsp paprika powder
salt to taste
For assembling the pizza:
1 cup cheese or as needed
1/2 cup tomatoes, finely chopped
1/2 cup spring onion, finely chopped

How to make The Most Easy & Delicious Dinner Casserole
Bake at 400degrees (f) for 10-15 mins
Ingredients
Oil
1 to 2 pounds of ground beef
1 can of tomato green chili (hatch)
3 Tbsp taco season of choice
1 1/2 Tbsp Knorr chicken bouillon (adjust to taste)
12 corn tortillas
2 Cups Mexican red rice
3 cups Mexican cheese blend
1 small can of black beans (15oz)
Half finely chopped Iceberg lettuce
16oz Mexican sour cream
Pico de Gallo
Hot sauce
Pico de Gallo
1 large tomato
1/4 onion
Half a jalapeño
Small bunch cilantro
Lemon juice and salt to taste

This taco squares casserole dish is like a Southwestern version of lasagna. Layers of beef, tortillas, and cheese come together to form cheesy goodness. Plus, it's a pretty quick meal to put together, which makes it perfect for a weeknight meal!

INGREDIENTS
- 2 lb beef
- 1 yellow onion
- 1 1/2 tsp salt
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- 3/4 tsp garlic powder
- 1 28-oz can diced tomatoes
- 1 tbsp flour
- 12 corn tortillas
- 2 cups shredded cheddar cheese
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 9×13 baking dish and set aside.
- Add the ground beef to a 12-inch skillet over medium heat. Break into small pieces, then add the onion and salt. Cook until the meat is browned and the onion is soft, 8-10 minutes.
- Once the meat is cooked, with the skillet still over medium heat add the chili powder, cumin, garlic powder, and oregano. Stir and cook for 1 minute and add the tomatoes. Bring to a simmer and cook for 5 minutes on low. After 5 minutes, sprinkle in the flour and cook for 1 minute. Remove from the heat and set aside.
- If a gas stove is available, char the tortillas. Turn a burner on low and set a tortilla on for 30 seconds until slightly blackened. Then flip, repeat, and then remove from the flame. Charing is simply an optional step. If not available, move on to the assembly.
- In the prepared baking dish, add 1/2 cup of the meat mixture and spread it over the dish. Add 6 tortilla shells, slightly overlapping and covering the bottom of the baking dish. Add half of the meat mixture and spread evenly. Then sprinkle with half of the shredded cheese. Repeat one time with the remaining tortilla shells, meat mixture, and cheese. At this point, the casserole can be covered with plastic wrap and stored in the refrigerator for one day before baking.
- Bake in the preheated oven until warmed through, 30-40 minutes. Once baked, remove from the oven, cut into squares, and serve with favorite taco toppings!

Tostada Recipe
Ingredients:
1 half of lettuce sliced
Pico de Gallo (Half of purple onion chopped, ½ Cup of Cilantro Chopped, and 2 Roma tomatoes cut into chunks)
Sour cream for topping
1 Avocado (sliced)
3 Cheese Mexican Blend
Squeeze of lime juice for topping
Your favorite salsa
Black Olives sliced
1 bag of your favorite tortilla chips
1 ½ pound of Ground Beef
3 cups of cooked Pinto Beans smashed
1 tbsp of Chili powder
1 tbsp of Dried Oregano
1 tsp of Ground Cumin
2 large garlic cloves chopped
Salt and Pepper to taste
Prep all your ingredients.
In one skillet, heat up your pinto beans. Once heated smash the beans and allow the juices to evaporate to where you have creamy beans.
In another skillet, crumble your ground into some Olive Oil. Add your garlic, salt, pepper, chili powder, dried oregano, and cumin. Cook for 7-8 mins and break up the meat as it cooks. Then remove enough fat juices from the skillet. Leave a little for flavor.
Use your favorite tostada shells and layer some beans, ground beef, avocado slices, lettuce, sour cream, cheese, pico de gallo, salsa and squeeze of lemon.
Ready to serve
