INGREDIENTS
FOR THE RICE
3¾ cups (563 g) cooked rice
FOR THE VEGETABLES
1 medium (200 g) sweet onion
1 medium (150 g) red pepper
1 small (150 g) zucchini
1 tbsp (15 g) olive oil
salt and pepper to taste
FOR THE TURKEY
1 ½ lbs (681 g) ground turkey (93/7)
6 oz (170 g) green beans
1 tbsp (15 g) garlic minced
1 tbsp (21 g) honey
2 tsp (10 g) sriracha
2½ tbsp (37 mL) chicken stock
1 tbsp (15 mL) soy sauce
1 tbsp (15 mL) olive oil
salt and pepper to taste
INSTRUCTIONS
FOR THE RICE
1. Cook enough rice to have 3¾ cups of cooked rice. 1 cup of uncooked rice will yield around 3 cups of cooked rice.
FOR THE VEGETABLES
2. Wash and cut your red pepper and zucchini into a large dice. Cut your sweet onion into a large dice as well.
3. Cut your green beans into small pieces, about ¼ in length.
4. In a large skillet, heat some olive oil over medium high heat.
Add the onion first and cook for 2-3 minutes then make some room and add in the red peppers and zucchini. Cook until soft and remove from the pan. Season with salt and pepper to taste.
FOR THE TURKEY
5. Heat some olive oil over medium high heat. Add in the ground turkey and cook until browned.
6. In another skillet over medium high heat, add a bit of oil and the green beans. Cook for 4-5 minutes so that they can develop color. Add in 1 tbsp of minced garlic and cook an additional 2-3 minutes and season with salt to taste. Be sure not to burn the garlic.
7. Combine the turkey and green beans in one skillet. Add in 1 Tbsp of honey, 2½ Tbsp chicken stock, 2 tsp sriracha, and 1 tbsp soy sauce. Stir to incorporate and season with salt and pepper to taste.
PLATING
8. This recipe makes 5 servings. Add ¾ cup of cooked rice and to each container and divide the remaining ingredients equally.

3. 1 - BAG - PEPPER STIR FRY - YELLOW ONION, RED, YELLOW, GREEN PEPPERS ( DOLLAR TREE )
4. 1 CAN OF BLACK BEANS - ( OPTIONAL )
5. 1 - 8 OZ BAG OF GREAT VALUE TACO BLEND CHEESE ( WALMART )
6. 2 - CUPS OF LONG GRAIN RICE
7. MINCED ONION - 1 TO 2 TEASPOONS
8. 1 - CAN OF ROTEL ORIGINAL DICED TOMATOES & GREEN CHILIES
9. OLIVE OIL - AS NEEDED
10. BADIA TACO SEASONING - AS NEEDED - OPTIONAL ( THIS SEASONING CAN BE USED AS A SUBSTITUTE FOR THE TACO BELL SEASONING )
11. BADIA CHILE & LIME. -1 TO 2 TEASPOONS ( A SLICE OF FRESH LIME & CHILI POWDER OR CRUSHED RED PEPPER FLAKES CAN SUBSTITUTE. )
12. BADIA KETCHUP SEASONING - 1 - 2 TEASPOONS ( 2 TEASPOONS OF TOMATO PASTE CAN SUBSTITUTE )
13. GREEN ONIONS OR SCALLIONS - 1/2 TO 1 CUP
14. TACO BELL SEASONING MIX - 1/2 PACKET OR LESS ( THIS SEASONING IS SALTY )
15. TACO BELL MILD SAUCE - OPTIONAL
16. OLD EL PASO - SOFT TORTILLA BOWL ( TACO SHELLS CAN ALSO BE USED )
17. DICED TOMATO , SOUR CREAM, SHREDDED LETTUCE
COOKING INSTRUCTIONS
PREPARING THE ONIONS & TOMATO
1. RINSE THE ONION & TOMATO
2. CUT THE ONIONS & TOMATO INTO SMALL PIECES . SET ASIDE
PREPARING THE TURKEY
1. USING A LARGE SKILLET ON MEDIUM HEAT. ADD 2 - 3 TEASPOONS OF OLIVE OIL TO THE BOTTOM OF THE SKILLET. ( ENOUGH TO COVER THE BOTTOM OF THE SKILLET )
2. ADD THE GROUND TURKY & BREAKDOWN INTO SMALLER PIECES . COOK FOR 4 TO 6 MINUTES
3. ADD THE PEPPER STIR FRY , BEANS & PEPPERS, 1 -2 TEASPOONS OF THE MINCED GARLIC , THE DICED TOMATOES, GREEN ONION
4. ADD 1 TO 2 TEASPOONS OF THE KETCHUP SEASONING ( SUBSTITUTE W/ - 1/2 CAN OF TOMATO PASTE
5. ADD 1 TO 2 TEASPOONS OF THE CHILI & LIME SEASONING ( SUBSTITUTE W/ - A SLICE OF FRESH LIME SQUEEZED & 1 TO 2 TEASPOONS OF CRUSHED RED PEPPER FLAKES OR CHILI POWDER )
6. ADD 1/2 PACKET OR LESS OF THE TACO SEASONING ** THIS SEASONING CONTAINS A LOT OF SALT. START WITH A LITTLE & ADJUST LATER **
7. MIX ALL THE INGREDIENTS UNTIL WELL BLENDED. TASTE & ADJUST YOUR SEASONINGS IF NEEDED.
ADDING THE RICE
*** I DID NOT RINSE THE RICE FOR THIS RECIPE ***
1. ADD - 2 CUPS OF THE LONG GRAIN RICE TO THE SKILLET - MIX UNTIL WELL BLENDED
2. ADD 1 1/2 TO 1 3/4 OF WATER TO THE SKILLET & STIR
3. TURN THE HEAT UP TO HIGH . WHEN THE LIQUID BEGINS TO BOIL. IMMEDIATELY TURN THE HEAT DOWN TO LOW. PLACE A PIECE OF FOIL OVER THE SKILLET. THEN PLACE THE SKILLET TOP OVER THE FOIL.
4. COOK FOR 20 TO 25 MINUTES.
5. CHECK AFTER 20 MINUTES. IF DONE TURN THE HEAT OFF & FLAKE THE RICE WITH A FORK
ADDING THE CHEESE
1. ADD THE TACO CHEESE OVER THE TURKEY & RICE VEGGIE MEAL
2. COVER THE SKILLET WITH THE TOP. ALLOW THE CHEESE TO MELT FOR 3 TO 5 MINUTES
** OPTIONAL PRESENTATION **
1. FILL THE BOTTOM OF THE TACO BOWL WITH THE TURKEY MIXTURE
2. ADD THE SHREDDED LETTUCE, THE TOMATOES , SOUR CREAM , TACO CHEESE , GREEN ONION
3. TOP WITH THE TACO BELL SAUCE

1 cup white rice
1 red and green bell pepper
2 stalks of celery
1 onion
1 lb andouille sausage
1 large smoked turkey leg or hamhock
1 tbsp cooking oil
dry oregano
1 tsp fresh diced thyme
smoked paprika
1 tsp better than bouillon chicken base
salt, pepper, garlic, onion powder, cayenne, cajun seasoning
3-4 cups chicken broth
green onion (garnish)
Directions:
Soak beans overnight in cold water (fridge).
In a medium sized pot add 2 cups water, cook rice according to package instructions; set aside.
Heat vegetable oil in a large Dutch oven over medium heat. Add sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes. Add onion, bell pepper and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
Stir in tomato garlic and oregano, thyme, chicken base, smoked paprika, cajun seasoning.
Stir in red beans, chicken stock, andbay leaf. Season to taste. Add whole smoked turkey leg. Bring to a boil; cover, reduce heat and simmer for about 1 hour, stirring every 15 minutes. Uncover; continue to simmer until reduced, an additional 15-20 minutes.
Using a wooden spoon or potato masher, mash beans until slightly thickened, if desired; season with salt and pepper, to taste.
Serve immediately, topped with rice and garnished with green onion, if desired.
