How To make Vegan Chocolate Sponge Cake
2 c Self-rising flour
-(pref. 85% whole-wheat) 1/4 c Cocoa powder
3 ts Baking powder
1 1/3 c Vanilla sugar
-OR- Superfine sugar 9 tb Sunflower oil
1 1/2 c Water
Vegan margarine -for greasing
TO DECORATE:
1 Qty. Chocolate Fudge Icing
-OR- Chocolate Buttercream Dark chocolate -coarsely grated Confectioners' sugar VEGAN LEMON CAKE VARIATION:
1/2 c -additional flour
2 tb -Lemon juice
1 -Lemon, rind grated
Preheat the oven to 325 F. Grease two 8- to 8-1/2-inch shallow cake pans and line the base of each with a circle of greased wax paper. Sift the flour, cocoa powder and baking powder into a bowl. Add the sugar, oil and water. Mix well to a batter-like consistency. Pour the mixture into the prepared pans and bake for about 40 minutes, until the cakes spring back to a light touch in the center. Turn the cakes out onto a wire rack and strip off the wax paper. Allow to cool completely. Sandwich the cake together with half the fudge icing or chocolate buttercream and coat the top with the rest. Sprinkle on a little grated chocolate and confectioners' sugar. Variation: VEGAN LEMON CAKE: Use the additional amount of flour and omit the cocoa powder. Replace 2 tb. of the water with lemon juice and add the grated lemon rind. Sandwich the cakes together and coat the top with lemon buttercream or fudge icing and decorate the cake with yellow sugar decorations and leaves cut from angelica. Here is my take on Vegan Chocolate Cake and this according to me is the best vegan cake recipe you'll ever need. Its rich, moist, chocolaty and super delicious. Try it even if you are not a vegan!

INGREDIENTS
Vegan Chocolate Cake:
200 grams ( 1.5 cup ) All purpose Flour
28 grams ( 1/4 cup ) Cocoa powder
1/2 tsp salt
1 tsp Baking Soda
200 grams ( 1 cup) Granulated Sugar
120 ml ( 1/2 cup ) Vegetable oil
240 ml ( 1 cup) Boiling water
1 tsp Instant Coffee Powder
1 tbsp White Vinegar
1tsp Vanila Extract
IMP NOTE: I forgot to show when I added the Vinegar and the Vanilla.
Add it along with the wet ingredients.
Vegan Chocolate Ganache:
250 grams Chopped Chocolate
180ml (3/4 cup) Coconut Cream
Garnish
Strawberries
Melted Chocolate
Sprinkles

Ingredients:
1. Flour - 200 g
2. Cocoa (I have not alcoholized) - 65 g
3. Milk - 320 g
4. Lemon juice - 2 tsp.
5. Sugar - 210 g
6. Vegetable oil - 135 g
7. Vanilla - 2 tsp
8. Soda - 1 tsp.
9. Baking powder - 1/2 tsp
10. Salt - 1/8 tsp
Ingredients for healthier recipe:
1. Wholemeal flour (buckwheat or spelt flour) - 200 g
I do not advise adding wheat wholemeal flour because the sponge has a more bread-like taste.
2. Cocoa (I have not alcoholized) - 65 g
3. Vegetable milk (oat, coconut, cashew or other, I used oat milk) - 320 g
4. Lemon juice (or vinegar) - 2 tsp.
5. Sugar (cane, coconut, I used cane sugar) - 210 g
6. Coconut oil (melted) - 135 g
7. Vanilla - 2 tsp
8. Bicarbonate of soda - 1 tsp.
9. Baking powder - 1/2 tsp
10. Salt - 1/8 tsp

Chocolate Sponge Cake - For Pastries/Layered Cakes | In Cooker | Vegan | Eggless Baking Without Oven
Many times, When we prepare layered cakes such as Black Forest Cake or pastries such as Pineapple Pastry.. The breaks, It does because it is extremely soft and moist. Here, Is Chocolate Sponge Cake, which is the cake used for layering or making pastries. Now, lets make this dark chocolate cake which is insanely chocolaty, spongy and moist! Oh yes, this cake is on our series Eggless Baking Without Oven, which definitely means, it is made in my cooker. You can make it in your pressure cooker as well :)

Amazingly Rich Chocolate VEGAN Celebration Cake | Cupcake Jemma
It's the last Vegan recipe in this series and it's a big one! This is such a naughty cake for all of those chocoholics out there who need to get their plant-based cake on.
Recipe -
480ml soya milk (unsweetened)
2tps apple cider vinegar
240g sunflower or other vegan spread
400g caster sugar
1 tsp vanilla extract
430g self raising flour
60g cocoa powder
1 tbs baking powder
1 tsp bicarbonate of soda
1/4 salt
To decorate, use my Vegan Buttercream, the chocolate version, which can be found here -
