How To make Daffodil Sponge Cake
1 c Cake flour; sifted
1/2 c Sugar; divided
4 Egg yolks
1/2 ts Lemon extract
10 Egg whites
1 ts Cream of tartar
1/2 ts Salt
3/4 c Sugar
1/2 ts Vanilla extract
Recipe by: Southern Living
Sift flour and 1/2 cup sugar together 3 times; set aside. Beat egg yolks at high speed of an electric mixer 4 minutes or until thick and lemon colored. Add lemon extract; beat at medium speed an additional 5 minutes or until thick. Set aside. Beat egg whites until foamy. Add cream of tartar and salt; beat until soft peaks form. Add 3/4 cup sugar, 2 tablespoons at a time; continue beating until stiff peaks form. Sprinkle one-fourth of flour mixture over egg whites; gently fold it in. Repeat procedure with remaining flour, adding one-fourth of the mixture at a time. Divide egg white mixture in half. Fold vanilla into half of egg white mixture. Gently fold beaten egg yolks into remaining egg white mixture. Pour half of yellow mixture into an ungreased 10-inch tube pan; then gently add half of white mixture. Repeat procedure with remaining mixtures. Gently swirl batters with a knife to create marble effect. Bake at 350 degrees for 45 to 50 minutes or until cake springs back when lightly touched. Invert pan carefully. Let cake cool in pan 40 minutes. Loosen cake from sides of one 10-inch cake. -----

Creamy Buttercream Frosting for Daffodil Cake
1 stick butter, softened
4 1/3 cups confectioner's sugar (This is the same as powdered sugar or icing sugar.)
1/3 cup cream or milk
1 teaspoon vanilla extract.
Place all ingredients in a large bowl. Beat with an electric mixer on medium speed until light and fluffy. Ice cake with a table knife or spreader. For the Daffodil Cake, ice the top first, then place frosting around sides (blending in any excess filling encountered along the way). Delicious! Betty's Basic Yellow Cake (Used in 1,000th Video)
Betty demonstrates how to make Basic Yellow Cake. This is a moist, rich cake.
Basic Yellow Cake
1 cup butter, softened
2 cups sugar
4 eggs
3 cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
1 cup milk
1 1/2 teaspoons vanilla extract
Beat 1 cup butter with electric mixer until light and fluffy. Gradually add 2 cups sugar, continuing to beat with an electric mixer, until all sugar is incorporated into the mixture. Add 4 eggs, one at a time, beating well after each addition. Combine 3 cups flour, 2 ½ teaspoons baking powder, and ½ teaspoon salt. Add flour mixture to beaten mixture alternately with 1 cup milk, beginning and ending with flour mixture. Mix with a large spoon after each addition. Stir in 1 1/2 teaspoons vanilla. For a 3-layer cake, pour batter into 3 greased and floured (or sprayed) 9-inch round cake pans and bake at 375 degrees (F) for 20 to 25 minutes, or until a toothpick inserted into the middle comes out clean. For a rectangular cake, pour batter into a greased and floured (or sprayed) 11-inch by 15-inch baking dish. (I used a 9-inch by 13-inch baking dish, but it was small for the amount of cake batter and therefore took a long time to cook.) Allow cake to cool in pan (or pans) for 10 minutes. Then cool completely on a wire rack. When cake is thoroughly cooled, use a knife to even up cake layers and then frost, if desired. This cake is good without frosting, but my next video will show you how to make a super cook cake frosting! Love you all! --Betty ♥♥♥♥♥

INGREDIENTS
Eggs (eggs must be at room temperature) - 6
(separate egg white and egg yolks)
All Purpose Flour - 1 cup
Cocoa Powder - 2 Tbsp
Corn flour - 1 Tbsp
Salt
(Do not use oil,butter,milk,baking powder, baking soda )
You can either steam or bake this recipe. If baking, bake it in a preheated oven at 180°C for 25-30 minutes or depending on your oven's specification. I showed steam bake method
