How To make Zucchini Bread (Emeril)
1 1/2 c flour
1/2 ts baking soda
1/4 ts baking powder
1/4 ts salt
1 ts cinnamon
1/4 ts nutmeg
1 c sugar
1 c grated zucchini
1 egg
1/4 c vegetable oil
1/4 ts chopped lemon zest
1/2 c chopped walnuts
Preheat oven to 350 degrees. Grease an 8 by 4 by 2-inch loaf pan. In a mixing bowl combine flour,
baking soda, baking powder, salt, cinnamon and nutmeg. In another bowl combine sugar, zucchini, egg, oil and lemon zest and mix well. Add flour mixture and stir until just combined. Stir in walnuts. Pour batter into prepared pan. Bake for 55 to 60 minutes. Cool for 10 minutes and remove from pan. For best results, wrap and store overnight before cutting. First original recipe - probably a subconscious intertwining of other banana bread and zucchini bread recipes that we've tried. Enjoy!
INGREDIENTS
3 eggs
1 cup applesauce
1 cup sugar
1 cup all-purpose flour
1 cup whole wheat flour
¼ teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoons vanilla extract
1 cup chopped pecans
1 ½ cup raw zucchini, grated
1 ½ cup mashed ripe banana
DIRECTIONS
1. Grate zucchini with large holes on box grater, and set aside.
2. Mash bananas with a fork and set aside.
3. In a large mixing bowl, beat eggs, sugar and applesauce together with hand mixer on medium speed.
4. Add flours, baking powder, baking soda, cinnamon, salt, vanilla and pecans. Mix together with rubber spatula.
5. Add zucchini and bananas and continue to mix with spatula until uniform in consistency.
6. Divide evenly into 2 greased and floured 9x5 inch loaf pans.
7. Bake in 350 degree oven for 45-55 minutes or until toothpick comes out clean from the center.
8. Remove pans to wire rack and cool for 10 minutes before removing loaves from pans to completely cool on wire rack.
9. Good luck being able to wait until they cool completely, we never can!
