Healthy Yogurt Parfait with Macadamia Nuts and Fruits | 5 Minute Breakfast
Today I made a healthy yogurt parfait with macadamia nuts, pine nuts and fruits. This is a 5 minute breakfast! Healthy and Easy to make! Did you know that macadamia nuts are full of healthy fats, minerals and vitamins? They are a great source of antioxidants. I tried these macadamia nuts for the first time and loved them!
Pine nuts, blueberries, oranges and cherries are added to this healthy yogurt parfait. I simply made layers with fruits, nuts, yogurt and granola bar. I used non-fat plain Greek yogurt but you can use any yogurt you like!
This 5 minute breakfast is great on busy days when you don't want to cook. This yogurt parfait is great for a hot summer. The parfait is light, nutritious and refreshing.

Macadamia Nut Pie
Recipe
Ingredients
Shortcrust pastry*
Filling:
3 eggs
1½ cups halved macadamia nuts
1 cup maple syrup
¼ cup melted coconut oil
1 tablespoon vanilla extract
Directions
Pre-heat oven to 350°F, 180°C, 160°C fan, Gas Mark 4.
Roll pastry.
Place pastry to pie dish.
Fill pie shell with nuts.
In a small bowl, beat the eggs, maple syrup, coconut oil and vanilla.
Pour mixture into pastry shell.
Bake for 45-50 minutes.
Allow to cool.

• 4 bananas

This dish was inspired by Desiree's trip to Hawaii and since we stuck at home during this period, we decided to bring Hawaii to us with these delicious and easy coconut macadamia nut pancakes.
Pancake ingredients:
1 1/2 cup of all purpose flour
3 1/2 teaspoons of baking powder
1 teaspoon of salt
1 tablespoon of white sugar
1 1/4 coconut milk
1 egg
3 tablespoons of butter
1/4 cup of macadamia nuts
