Chili and Cornbread | Chili Cornbread Skillet Pie - This Chili and Cornbread Skillet Pie is super easy to follow and prepare. This one-dish dinner is a favorite for many because just like I said, one-dish is popular among the busy times we live in. The filling cooks on the stove top then gets topped with a cornbread batter before going in the oven.
Ingredients
1.5 lbs. Ground Beef
2 (8 oz.) cans Tomato Sauce
1 (10 oz.) can Diced Tomatoes w/Green Chile's
1 (14 oz.) can of Kidney Beans, drained
1 (14 oz.) can Black Beans, drained
1 Yellow Onion, Large and diced
4 Garlic Cloves, minced
2 tbsp Chili Powder
2 tsp Cumin
1 tsp Oregano
2 tbsp Extra Virgin Olive Oil
Salt and Pepper to taste
1 cup of Cheddar Cheese, grated, can be added to your cornbread (optional)
1 (8 oz.) can Creamed Corn or whole Sweet Corn (optional)
Preheat oven to 375* F
Serves 6 - 8

STUFFED MEXICAN CORNBREAD: QUICK WEEKNIGHT DINNER
As always, I over purchased in food preparation for Thanksgiving. With the leftover boxes of Jiffy cornbread mix I decided to make some stuffed mexican cornbread. This uses mostly pantry staples and things you probably already have in your kitchen.
This took longer in the oven this time than it usually does. I'm not sure if it is because I doubled it or if my oven is going out, but this usually only takes about 18-20 minutes, so watch your time. Toss in some extra jalapenos to pretty it up and add a little bite.
Ingredients: (this serves a lot!)
1 medium onion
1 bell pepper chopped
1 lb ground beef or ground pork
4 boxes of Jiffy Cornbread, made per directions
1 pkt taco seasoning mix
1/2 can black beans drained, rinsed
1/2 can corn drained
1 can rotel, undrained (can use diced tomatoes if you dont want spice)
couple cups fresh spinach
2 cups cheese for cornbread, plus a little for sprinkling on top

This classic cornbread and sausage stuffing is phenomenal as written. But feel free to add twists to make it your own! GET THE RECIPE ►►
INGREDIENTS (Serves 4 to 6 as a side):
2 tablespoons olive oil, plus 1 tablespoon
4 sweet Italian sausages, uncased
1 large yellow onion, diced
2 stalks celery, sliced into roughly 1/2-inch pieces
3/4 cup fresh mushrooms, cleaned and chopped roughly, your favorite type
1 tablespoon butter
1/2 cup loosely packed fresh parsley, roughly chopped
2 tablespoons loosely packed fresh sage leaves (just a couple of leaves), finely chopped
1 tablespoon loosely packed fresh thyme leaves, finely chopped
2 teaspoons (heaping) kosher salt, plus more to taste
1/2 teaspoon freshly cracked pepper, plus more to taste
1 (14-ounce) package cornbread stuffing
1/2 cup dried sour cherries
3/4 cup cup of nuts (I like pecans, but pine nuts, pistachios, hazelnuts, separately or in combination, are all good)
1 cup chicken broth, plus more if needed

Hey friends! My Italian Sausage Cornbread Dressing screams holidays! It’s a dish your guests will love.
This recipe is sure to win the best dressing prize at the next family holiday party! It’s so moist, buttery and flavorful.
The key ingredient is Italian sausage. I use mild, but you could definitely try spicy for an extra kick. Brown this with some chopped onions and green bell peppers. Drain and add to crumbled cornbread and bread croutons. Fold these ingredients along with eggs, melted butter, chicken broth and sage. Place in a buttered baking dish, and bake for about 20 minutes or until cooked through. The smell is amazing! This dressing is so, so good, y’all! Simply delicious.
