On special occasions, Grandma Zimmern would make my favorite salmon-tomato aspic recipe. Now this kind of dish is old-school in every sense, but I swear it is making a comeback, and you should get on the bandwagon before you are labeled a culinary poseur by all of your friends.

Recipe that didn’t work: boil about 1 tablespoon of agar agar in about 1.5 cups of water until dissolved. Combine I cup of gf vegan tomato soup, 1 tablespoon of vinegar, 2 tablespoons of lemon juice, a handful of grated lemon rind, about a tablespoon of sugar, few splashes of hot sauce, and some ripped up basil. Add the agar agar mixture, mix, and spoon into muffin cups (about 1/2 inch full) and put into fridge to set for at least 3 hours. Note: I left some in the fridge for a few days and found that they had almost set to solid, so maybe I just needed to add more agar agar or let it set for s SUPER long time?!

But you can also use this intriguing ingredient to prepare a savory dish known as an aspic, which is simply a savory take on jello. In this video, chef Alexis deBoschnek tries to recreate a retro Tomato Aspic recipe from a vintage edition of the Better Homes & Gardens New Cook Book. While its ingredients seem to resemble those of a Bloody Mary, the bouncy texture of this dish is totally different from that of the beloved cocktail – or most renditions of tomato for that matter.
