Ingredients:
3 pcs boneless chicken thigh -600g
1 tbsp of light soy sauce
1/2 tsp of salt
1/2 tsp black pepper
1 egg yolk
1 tbsp corn starch
4 cloves of minced garlic
1 thumb size ginger
2 stalks of spring onions
20-25 pcs of dried chillies- washed
1/4 cup of peanut -peeled and fried
1 tsp of sichuan pepper corns
1 tsp of sugar

Restaurant Style Schezwan Chicken/ Szechuan Chicken at home
INGREDIENTS:
Chicken - 300gm, boneless,
Schezwan Sauce - 2 tbsp,
Hot Red chilli Sauce - 1 tbsp,
Garlic paste - 2 tsp,
Onion - 2 medium Cubes Pieces,
Spring onion handfull,
Corn flour - 1 tbsp,
Vinegar - 1 tbsp,
Soya sauce - 1 tsp,
Salt to taste,
Oil - 2 tbsp,
Red Chilli powder - 1/2 tsp,
METHOD:
Marinade the Chicken With Corn flour, Soya sauce, Salt, Vinegar, and 1 tsp of Garlic paste. Keep it for 1 hour.
Fry the Chicken into the hot oil, after a good fry shift it a side of the pan. Add Garlic paste, Red Chilli powder, Salt and Hot Red Chilli Sauce, mix well for few seconds. Then Mix along with the Chicken and cook it for 2 mins in high flame.
Add little of water, put Onion and Spring onion into it and cook for 10 mins. When Chicken will soft turn of the flame.
Serve hot.

INGREDIENTS
-Chicken breast, cut into 1-inch pieces
-2 Tbsp all-natural peanut butter
-2 Tbsp soy sauce
-1 head of broccolini, sliced
-2 red chilies, sliced
-Rice noodles
-Crushed peanuts
-Lime
-Salt & pepper
-Veg oil for stir-frying
METHOD
-Have a pot of water boiling for the rice noodles, cook noodles according to packet instructions
-Place a pan on high heat, once hot add in oil to coat the bottom of the pan
-Add in the sliced chilies and chicken
-Drop the broccolini florets in the boiling water for about 40 seconds then transfer to pan
-Stir in peanut butter and soy sauce. If the sauce is too thick add hot water until it loosens
-Add in rice noodles
-Serve with crushed peanuts and a squeeze of lime

Ingredients
- 2 boneless chicken legs
- 1 tbsp chopped scallion
- 1 tbsp chopped garlic
- 1 tbsp chopped ginger
- 1 cup chopped dry red pepper
- 2 chopped green pepper
- 1 tbsp sesame seed
- 1 tbsp pepper corn
- 1/2 tsp salt
- 1/4 tsp white pepper
- 1 tbsp wine
- 2 tsp soy sauce
- 1.5 tbsp sesame oil
Directions
- Clean, dry and cut chicken into cubes
- Marinate the meat with 1/2tsp salt/1/4 tsp white pepper/1 tbsp wine/1 tsp soy sauce /1 tbsp sesame oil in a bowl, mixing them well, rest about 10 minutes ,ready for use.
- Chop scallion/garlic/ginger /red dry pepper/green pepper .
- Pour 4 or 5 cups cooking oil in wok, add the chicken in at medium high heat , fry about 5 minutes, take out .Reheat oil at hight temp, fry 2nd time for 1minute , take out ,ready for use.
- Pour 2 tbsp oil in the wok, add garlic /ginger /pepper corn /red pepper in at medium heat, stir 2 minutes, then add chicken /green pepper /1tsp soy sauce/1/2tbsp sesame oil, stir 1 minute
- Plate, sprinkle on sesame seeds, ready to serve
