Instant pot pressure cook - 8 minutes
Ingredients
Oil
1 Pound of ground beef
5 cups of water
1 EGG
2 Roma tomatoes
3 Medium potatoes
1 carrots2
Small zucchini
1/2 medium onion
Small bunch of Cilantro
1 Anaheim pepper
1 Garlic clove
1 Green onion
3 Tbsp AP flour or 2 Tbsp rice
4 Tbsp Natural Chicken bouillon
1 Tbsp Tomato Sauce
1 Tsp cumin
1 Tsp Black Pepper
1 Tsp salt

INGREDIENTES PARA 24-26 ALBONDIGAS EN CALDILLO
CALDILLO: 4 jitomates (300 gm), agua a cubrir, ¼ cebolla, 2 dientes ajo grandes, ¾ tza agua, aceite para freír, 1½ cdta caldo res o pollo en polvo, o al gusto, 1 L caldo de res ,1 chile chipotle en adobo (opcional)
ALBONDIGAS: 3 cda arroz, 300 gm carne res + 300 gm carne cerdo molidas, ¾ cdta sal, ⅛ cdta pimienta negra molida, ¼ cdta oregano, 1 diente ajo prensado, ⅓ tza cebolla picada, 4 ramitas yerbabuena, 2 huevos, 100 gm calabacita
VERDURAS: 1 zanahoria grande, 1 chayote, 1 tallo apio, 300 gm papa, 300 gm calabacita italiana
SERVIR: limón, Tortillas de Maiz calientitas y Arroz Rojo Mexicano
INGREDIENTS FOR 24-26 ALBONDIGAS - ALBONDIGAS SOUP
CALDILLO: 4 tomatoes (10½ oz), sufficient water to cover, ¼ onion, 2 large garlic cloves, ¾ cup water, canola oil, 1½ tsp beef or chicken bouillon, or to taste, 2 pints beef stock 1 canned adobo chipotle chile (optional)
ALBONDIGAS: 3 tbsp rice, 10½ oz ground beef + 10½ oz ground pork, ¾ tsp salt, ⅛ tsp ground black pepper, ¼ tsp Mexican oregano, 1 pressed garlic clove, ⅓ cup chopped onion, 4 mint sprigs, 2 eggs, 3½ oz zucchini
VEGETABLES: 1 large carrot, 1 chayote, 1 celery stick, 10½ oz potato, 10½ oz zucchini

ALBONDIGAS: How to Make Traditional Mexican Meatball Soup/Caldo de Albondigas
Albondigas or Caldo de Albondigas is one of the most traditional and delicious Mexican soups. In case you don't know, albondigas means meatballs in Spanish, and so this is a yummy meatball soup that is hearty and packed with wonderful vegetables. Read on for the recipe.
Albondigas
1 1/2 pounds lean ground beef
1/2 cup of uncooked or partially cooked long grain rice (you can also substitute 1/2 cup of raw oats)
1 egg
1 onion, chopped & divided (approx. 1/4 cup for meatballs, remainder for broth)
1 garlic clove, minced
2 roma tomatoes, chopped
3 potatoes, peeled & cut into bite sized cubes
1-2 Mexican squash or zucchini, chopped
1-2 carrots, peeled and chopped
1 stalk of celery, chopped
2 Tbsp. olive oil
6 cups (48oz.) chicken or beef broth
salt to taste (I used 1 tsp. for meatballs, and 1/2 tsp. in broth)
1/2 tsp. crushed pepper
1 tsp. whole cumin seed
Place ground beef in large mixing bowl. Add rice, 1/4 cup chopped onion, salt, pepper, cumin seed, and egg and mix until fully combined. Form meatballs about the size of a golf ball and set aside.
Heat large saucepan over medium high heat. Coat bottom of pan with approx. 2 Tbsp. oil. Once heated, add in remaining chopped onions and sauté until translucent. Add in chopped tomatoes and celery and allow to cook down a few minutes. Add in minced garlic and sauté. Add broth. Stir and bring to a boil. When it boils, carefully add in meatballs and lower heat to a simmer. Meatballs will take a total of 30 minutes to cook. (You will gradually add in other vegetables based on how long they take to cook.) 15 minutes after adding meatballs, add in potatoes and carrots. 7 minutes later, add in squash. Squash will take about 8 minutes to cook, which should bring you right up to 30 minute mark from the time meatballs were put in. Taste broth for salt and add desired amount. Remove from heat and let sit covered 5 minutes more before serving.

Such meatballs are as a rule cooked out of mixed ground meat, beef and pork, with addition of cheese and spices. ✅ Ingredients:
• beef and pork mince – 1,8 lb | 800 g
• white bread – 1 slice
• milk – 3 fl oz | 100 ml
• 1 egg
• garlic – 2 cloves
• chopped up parsley – 2 tbsp
• bulb onion – 2 oz | 50 g
• hard cheese – 3 oz | 100 g
• ground coriander – ½ tsp
• wheat flour – 3 oz | 100 g
• white dry wine – 1 cup | 250 ml
• meat broth – 2 cup | 500 ml
• vegetable oil – 4 tbsp
• salt – 1 tsp
• ground black pepper – 1,5 tsp

• carving board
• bowl
????Preparation:
1. Cut the bread crust off and pour the soft part with the milk.
2. Lay the ground meat into a bowl, add an egg, the minced garlic, chopped parsley, grated cheese, ground coriander, 1 tsp of salt, ½ tsp of ground black pepper and squeezed bread and combine well.
3. Make small meatballs out of the prepared mince and roll in flour.
4. Heat a pan with the vegetable oil and fry the meatballs over high heat for about 10 minutes until golden crust.
5. Take the meatballs out into a bowl.
6. Into the same pan add the white dry wine, ½ tsp of salt, ½ tsp of ground black pepper and simmer over medium heat for about 2 minutes.
7. Then add the meat broth, bring to a boil and cook for about 5 minutes over low heat. The broth is becoming thicker.
8. Lay out the meatballs into the pan with the prepared sauce and bring to a boil.
9. Cover with a lid and simmer over low heat for 10 minutes.
10. Serve your “albondigas” meatballs with the sauce, mashed potato or vegetables.
Advices:
1. If your albondigas meatballs come out too spicy then balance a hotness with sour cream or Greek yogurt that fit this dish quite well.
