3 EASY CROCKPOT MEALS | COZY CROCKPOT MEALS | COOK WITH ME | The Lilac House
There is something magical and cozy about having a slow cooker meal, especially during the winter. In today’s video I am sharing 3 super cozy and hearty slow cooker meals that are staples for us. Let me know in the comments which recipe you are excited to try out.

SLOW COOKER CREAMY ITALIAN CHICKEN RECIPE
1 packet of Italian dressing mix
2 tbsp butter
4 tbsp Kodiak pancake mix
2 cups milk
garlic powder
onion powder
salt and pepper
1 TBSP chicken flavored Better than Bouillon
8 oz block of cream cheese, softened
1.5 pounds of chicken (I used tenderloins)
Cooked rice or noodles to serve creamy Italian chicken over
Directions:
1. In a sauce pan melt butter.
2. Whisk in kodiak pancake mix, once combined cook for 1 minute.
3. Pour in 2 cups of milk. Whisk until blended.
4. Bring to a boil. Lower temperature. Add a dash of salt, pepper, garlic powder, onion powder, and 1 tbsp Better than Bouillon.
5. Whisk in cubed ream cheese until combined. Add Italian seasoning packet.
6. Let cool.
7. Add chicken to a greased slow cooker. Pour creamy mixture over chicken.
8. Cook in slow cooker on low for 6-8 hours or on high for 3-4 hours.
9. Serve over rice or noodles.
10. Enjoy!
SLOW COOKER REFRIED BEANS RECIPE
1 pound pinto beans
1/2 chopped onion
1/2 tbsp minced garlic
salt and pepper
onion powder
garlic powder
cumin
4 tbsp ketchup
2 tbsp butter
dash of milk
Directions:
1. Cover pinto beans with water and soak overnight. In the morning toss out any beans that have floated to the top. Rinse and drain beans.
2. Add beans to slow cooker.
3. Add a dash of salt, pepper, onion powder, garlic powder, and cumin. Add chopped onion and minced garlic.
4. Cover beans with water.
5. Cook on low for 6-8 hours
6. Stir beans often and make sure they have enough liquid so it doesn't burn.
7. Once beans are soft mash them with a potato masher. Mix in butter, ketchup and dash of milk.
8. We eat our refried beans as bean burritos. We top ours with cheese, jalapeños, cabbage, salsa, greek yogurt or sour cream.
9. Enjoy!
SLOW COOKER LENTIL TACO SOUP RECIPE
3 cans of black beans, rinsed and drained
1 cup red lentils
Ancho chili powder (chili powder works just as well)
1 tbsp minced garlic,
2 cans of tomato sauce
1 can diced tomatoes, with or without green chilis
1.5 cups of frozen corn
1/2 tbsp sugar
2 tbsp taco seasoning
Directions:
1. Add onion, black beans, red lentils, chili powder, minced garlic, tomato sauce, diced tomatoes, frozen corn, sugar, and taco seasoning to a slow cooker.
2. Cook on low for 6-8 hours or on high for 3-4 hours.
3. You can top it with sour cream or greek yogurt, shredded cheese, and tortilla chips.
4. Enjoy!

Cookfulness Spring Season (1) Session 3 - cooking with chronic pain & disability and making it easy!
In this first series of six sessions specially created for people with pain, you’ll learn amazing and very simple ways to adapt cooking, adapt ingredients and adapt dishes, so you can cook them and celebrate them no matter how bad a day you are having!
This is Season 1 Session 3, first shown on Friday 23rd April 2021.
Ian Taverner is a chronic pain and mental health survivor. He has a young family and, through these illnesses, regrettably missed a lot of family life, missed being a husband, being a dad.
Now on an upward path out of adversity, Ian has dedicated his life to helping other fellow sufferers and their loved ones improve their quality of life through the therapeutic power of cooking, just as it has done for him.
Ian will start with some basic recipes and build slowly up over six sessions, doing at least two dishes a session!
As Ian says: Cooking has given me a role, given me pride – both in myself and of others in me – it’s given me hope and given me some passion!”
The Cookfulness concept
Ian Taverner is the creator of a brand new type of cookbook – Cookfulness – which strip away many of the barriers associated with cooking, replacing them with positive stepping stones to help you achieve, no matter what type of day you are having. The ‘Cookfulness’ concept takes much of the mystery and pressure out of cookery, turning it into a joyful and rewarding activity for all.
