How To make Andrea's Coffee Cake
1/4 lb Margarine
1 c Sugar
2 Eggs
2 c Flour
1 ts Baking soda
1 ts Baking powder
1 c Sour cream
1 ts Vanilla
FOR THE FILLING:
1/4 ts Brown sugar
1 tb Cinnamon
1/4 c Sugar
3/4 c Chopped nuts
=========================== 3 tb Melted butter
Mix all ingredients for the cake together. Beat 3 minutes. Put 1/2 of the batter into a well greased tube pan. Sprinkle with half the filling mixture. Pour remaining batter on top. Sprinkle with remaining filling topping. Pour 3 T melted butter over the top of the cake and bake at 350F for 45 min. Ultimate Coffee Cake
A great coffee cake is a beautiful thing , so I’m sharing my ultimate coffee cake recipe with you and know you will love it. If you leave out the nuts and filling, it becomes a blank coffee cake canvas that can be customized in many different ways. Change up the filling with raspberry jam or a swirl of hazelnut spread. Add or omit the nuts. Put chocolate chips or fresh fruit such as blueberries in the filling. You will also enjoy this perfect coffee cake plain because it’s that delicious. Do it your way!
Ingredients
Cake Batter
• 1 stick butter at room temperature
• 1 cup sugar
• 3 large eggs at room temperature
• 3 tsp baking powder
• 1 tsp baking soda
• 2 ½ cups flour
• 1 ½ tsp vanilla
• 1 cup sour cream or plain Greek yogurt
• 1 tsp kosher salt
• 1 cup coarsely chopped walnuts (more if desired or omit from recipe)
Filling
1. 1/3 cup sugar
2. 2 tbs cocoa powder
3. 2 tsp cinnamon
Instructions
Preheat oven to 350F
• Mix filling and set aside
• Combine dry ingredients and set aside.
• Cream butter and sugar until light and fluffy.
• Add eggs one at a time and mix
• Scrape bowl with a spatula as needed
• Add vanilla and mix
• Add sour cream or yogurt and mix until well combined.
• Add dry ingredients and mix until just combined. Batter will be thick.
• Add half batter to 9” springform pan or cake pan.
• Add half chopped nuts over batter.
• Sprinkle filling mixture evenly of batter.
• Add rest of batter to pan and carefully smooth and cover all the filling.
• Add any additional nuts on top of batter if desired.
• Bake 45-55 minutes until tester comes out dry. The baking time will vary based on your oven so check periodically. Do not over bake!
• Cool before removing from pan.
