How To make Anise Pine Nut Cookies
1/2 Unsalted butter; softened
1/4 c Vegetable shortening
1/3 c Confectioner's sugar
1/4 c Granulated sugar
1 ts Vanilla
1 c Plus 2 tbsp flour
1/2 ts Salt
1/4 ts Baking powder
1/2 ts Aniseed
3/4 c Pine nuts; lightly toasted
Recipe by: DHD Using electric mixer, cream together the butter, shortening, and the sugars until the mixture is light and fluffy. Beat in the vanilla. In another bowl whisk together the flour, salt and baking powder, and add the flour to the butter mixture. Process the aniseed and 1/2 cup of the cooled pine nuts to a fine grind, and add to the dough. Blend well. Drop teaspoons of the dough 2 inches apart onto greased baking sheets, topping each cookie with several of the remaining pine nuts. Bake in a preheated 325F oven for 18 to 20 minutes until they are golden. Switch the positions of the baking sheets halfway through the cooking time. Let the cookies cool on the sheets for 2 minutes and carefully transfer (the cookies are very delicate) to racks. Store in airtight containers. Makes 55. 1/93 Gourmet. -----

- 2 large eggs
- 3 cups of all purpose flour
- 1 tsp baking powder
- 1/2 tsp pure vanilla powder
- 1/4 cup of vanilla sugar or sanding sugar
- 1 egg +1 tbsp water for the egg wash.
Bake at 350F for 20- 25 minutes

Pinoli (Pine Nut) Cookies - Super Easy & Quick, Just 4 Ingredients (e80)
Buon giorno a tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), demonstrates pignoli (pinoli) cookies - pinoli means pine nuts. With just four ingredients, they are so easy to make and are rather quick too. You can whip up these sensational cookies within 30 minutes.
Start with 1 pound of almond paste. Cut it up and place in a standing mixer, with the paddle attachment. Add a cup of sugar and 2 egg whites and beat for a few minutes. It gives you quite a sticky consistency, so you will want to have a bowl of water, for adding to your palm when you roll them into balls about an inch in diameter. In a separate bowl, add about 2 cups of pine nuts.
Once you roll a ball, taking care to add the water to your palm, roll it in the bowl of pine nuts. You will find it sticks less to your hand, but the pine nuts adhere to the dough better.
Place the balls on a baking sheet covered with parchment paper.
Bake at 350 for about 15 minutes. When you remove it, the dough will appear soft and it may be difficult to see the bottom of the cookie. It's best to let it cool 10 minutes and you will find it firms up and comes off easily.
Owing to the relatively costly pine nuts and almond paste, these cookies are often reserved for Christmas, weddings and special occasions, however Nonna Mia reckons, every day is a celebration! She has a point!!
Plate and dust with icing sugar. Make yourself a lovely espresso and buon appetito!

Ingredients
Melted butter 1⁄2 Cup (8 tbs)
Shortening 1⁄4 Cup (4 tbs)
All purpose flour 3 Cup (48 tbs)
Baking powder 5 Teaspoon
Salt 1 Pinch
Sugar 3⁄4 Cup (12 tbs)
Eggs 4
Vanilla extract 2 Teaspoon
For glaze
Powdered sugar 2 Cup (32 tbs)
Anise extract 2 Teaspoon
Milk 6 Teaspoon
Nonpareil decors 2 Tablespoon (For topping)
Directions
GETTING READY
1. Preheat the oven to 375 F.
MAKING
2. Put melted butter and shortening in a stand mixer. Mix them together.
3. Sift and add flour, baking powder and salt to the mixer.
4. Blend everything together. Meanwhile, drop in sugar and blend that as well.
5. While the batter is still getting blended, crack four eggs into the batter and continue to mix.
6. Scrape the sides of the bowl and mix everything for a minute.
7. Spoon cookies to a cookie sheet with the help of a spoon.
8. Put the cookie sheet in the oven for 8 to 9 minutes or until done.
9. Let the cookies cool on the side.
10. Meanwhile, prepare the glaze by whisking together powdered sugar, anise extract and milk until all glossy.
FINALIZING
11. Spread glaze on the cookies when they are cold.
12. Sprinkle nonpareils over them.
SERVING
13. Serve these cookies with coffee or otherwise and enjoy.
