How To make Aniseed Cookies
Servings: 40 4 Eggs; separated
1 3/4 c Powered sugar; sifted
Pinch salt 2 c Flour, all purpose
1/4 t Baking powder
2 t Aniseed; ground
Grease and flour baking sheets. Beat egg yolks, powdered sugar and salt in a large bowl until pale and creamy. Beat egg whites until very stiff; fold into egg yolk mixture. Siftflour, baking powder and aniseed onto egg mixture; fold in quickly but thoroughly. Fill a pastry bag fitted with a plain nozzle with cookie mixture. Pipe in small rounds onto prepared baking sheets. Let stand overnight to dry out. Preheat oven to 325'. Bake cookies 20 minutes. Cool on rack. -----

Anise Cookie Recipe aka Grandma's Cookies!
Ingredients:
6 cups all-purpose flour
2 tablespoons baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1 1/2 cups granulated sugar
2 teaspoons Anise extract (not anise oil)
6 eggs
Icing:
4 cups confectioners sugar
7-8 tablespoons of warm milk
1 teaspoon Anise extract
Instructions:

Preheat oven to 350ºF. Line cookie sheet with parchment paper.

In medium bowl, combine flour, baking powder and salt. In large bowl, beat butter and granulated sugar until light and fluffy. Add extract and eggs, one at a time, blending well after each. Add flour mixture; mix until soft, slightly elastic dough forms. Using floured hands, form dough into 5 in. long x 1/2 in. thick logs. Shape into “S” shape; place onto prepared cookie sheets.

Bake 10-12 minutes or until just beginning to brown on bottoms (do not overbake). Remove to cooling grid and cool completely.

In medium bowl, combine confectioners’ sugar and milk, 1 tablespoon at a time, until smooth. Dip cooled cookies in icing, coating completely; place on cooling grid set over parchment paper and allow icing to dry.

Springerle Anise Cookie Recipe for Beginners | Engraved Cookies
Springerle cookies are German molded cookies that have been around for centuries. Here is a simple recipe for beginners with these delicious cookies:
5 eggs
3 cups sugar
4 cups flour
1 tsp baking powder
1 tsp salt
1 Tbsp ground anise (optional)
anise seed (for sprinkling on the cookie tray)
A wooden Springerle mold or carved rolling pin is needed for the engraved designs on the cookies. I recommend using a rolling pin that has a more well-defined pattern than the one I am using.
After making the dough, chill the dough for about 2 hours. When rolling the cookies out, spray the rolling pin with non-stick spray. Once the cookies are placed on the cookie tray, place a towel over the cookies and let them sit at room temperature to dry for about 2 days. Then preheat the oven to 275 degrees F and bake for about 15 minutes.

Authentic Anise Biscottis
Ingredients
•3 cups all purpose flour
•3/4 cup granulated sugar
•3 eggs
•1/2 cup vegetable oil
•1 teaspoon baking powder
•pinch salt
•2 teaspoons anise seeds and dry orange peel (optional)
Instructions
In a Medium bowl, sift together flour, baking powder, anise seeds powder and salt salt. Set aside.
In a large bowl, beat the eggs and the sugar gradually and add the oil. Whisk for another minute.
Incorporate the flour mixture. Mix until combined.
Divide dough in half and shape each dough half into 10 1/2-inch-long, 4-inch-wide log. Transfer both logs to prepared baking sheet, spacing apart.
Bake logs until golden brown (logs will spread), about 25 minutes.
Using serrated knife, cut logs on diagonal into 1/2-inch-wide slices. Arrange slices, cut side down, on same baking sheet. Bake 12 minutes. Turn biscottis over; bake until just beginning to color, about 8 minutes. Transfer to rack and cool.
