NUT & SEED LOAF | Plant-Based, Gluten-Free & Keto Friendly

Used to buy a loaf like this from a bakery nearby but it was full of egg whites. This version is fully vegan, gluten-free, keto friendly and LOADED with fibre, protein and healthy fats. Don't eat too much at once or you'll feel it... ???? Second attempt at YouTube shorts video format! Will be uploading these #shorts from time to time as they are MUCH quicker to film and edit. Nut & Seed Loaf
???? What you'll need...
???? 1 cup (240 mL) assorted whole nuts (almonds, brazil nuts, pecans, walnuts, etc.)
???? 1 cup (240 mL) sliced almonds
???? ½ cup (120 mL) hemp hearts
???? ½ cup (120 mL) raw pumpkin seeds
???? ½ cup (120 mL) raw sunflower seeds
???? 1/3 cup (80 mL) flax seeds
???? ¼ cup (60 mL) chia seeds
???? ¼ cup (60 mL) ground flax seed
???? ¼ cup (60 mL) psyllium husk powder
???? ¼ cup (60 mL) sesame seeds
???? 1 tsp (5 mL) sea salt
???? 1 ½ cups (360 mL) recently boiled water
???? 1 tbsp (15 mL) honey or maple syrup
???? What to do...
???? Preheat oven to 375F. Lightly brush a standard loaf pan (see notes) lightly with oil then line with parchment paper for easy removal later.
???? In a large mixing bowl, stir together all ingredients except water and honey/maple syrup.
???? Add recently boiled water and honey/maple syrup; stir well to combine. The mixture will thicken considerably.
???? Transfer nut & seed mixture to prepared loaf pan. Using a spatula or lightly damp hands, press firmly into the pan to ensure no air spaces and level off the top.
???? Bake in center of oven for 75-85 minutes. Gently run a knife around the edges then carefully remove the loaf by lifting it out of the pan with the parchment paper! Cool completely before attempting to slice. It may fall apart if you don’t let it cool!!
???? Keeps for several days, well wrapped, at room temperature or even longer in the fridge or freezer. Slice as needed using a serrated knife and a gentle sawing motion.
Notes…
???? A standard loaf pan is roughly 9x5” (22.5x12.5cm)
???? You DO NOT have to follow this recipe exactly! The binders (flax, psyllium, chia) shouldn’t be altered too much as they hold it all together. As long as you have roughly the same volume of ingredients, feel free to mix up the ratios of seeds and nuts you have on hand!

Apple Banana Pecan Nut Loaf | Baking recipes | Sanjeev Kapoor Khazana

APPLE BANANA PECAN NUT LOAF
Ingredients
2 granny smith apples
1½ cups toasted pecans, coarsely chopped
2¼ cups refined flour (maida)
2 teaspoons cinnamon powder
2 teaspoons baking powder
¼ teaspoon baking soda
A pinch of salt
1 tablespoon castor sugar
20 grams butter + to grease
¾ cup light brown sugar
3 eggs
1 teaspoon vanilla essence
1 cup light olive oil
2½ cups mashed ripe bananas
2 tablespoons honey
Method
1. Preheat oven to 180º C.
2. Sift the flour, cinnamon, baking powder, baking soda and salt
in to a large bowl.
3. Peel, core and coarsely chop granny smith apples and put into
another bowl.
4. Melt butter in a non-stick pan. Add apples and two
tablespoons brown sugar and cook, stirring, for five minutes or
till apple is tender.
5. Put eggs, remaining brown sugar and vanilla essence in a third
bowl and beat well.
6. Add olive oil and mashed bananas and beat till just combined.
7. Add flour mixture, one cup pecan nuts and cooked apples and
mix well with an electric beater.
8. Pour this mixture into a greased loaf tin, top with remaining
pecan nuts and drizzle honey on top. Place the tin in the
preheated oven and bake for forty five to fifty minutes.
9. Remove from oven, cool, remove from the tin, slice and serve.

How to make a soft muffin with apples and walnuts.
Ingredients:
1 1/2 Cups All Purpose Flour (210g)
1/2 Cup Quick Cooking Oats (45g)
2 Teaspoons Baking Powder (10g)
1/4 Teaspoon Salt (1.5g)
1 Teaspoon Cinnamon (2g)
1/4 Teaspoon Nutmeg (0.5g)
1/2 Cup Butter, Softened (112g)
3/4 Cup Sugar (144g)
2 Eggs, lightly Beaten
1/2 Cup Sour Cream (120g)
1 Green Apple, Peeled and Chopped
1/2 Cup Walnuts (56g)
Directions:
1. In a bowl, whisk together the flour, oats, baking powder, salt, cinnamon, and nutmeg; set aside. In a mixing bowl, cream the butter and sugar together until light and fluffy. Add the eggs and sour cream and mix just until well combined. Add the flour mixture and stir together to combine. Fold in the apple and walnuts.
2. Line a muffin tin with paper liners. Spoon the batter into each cup. Bake in a preheated oven at 375F for 20 minutes or until an inserted toothpick comes out clean. Let cool completely on a wire rack.

Applesauce Nut Bread

1 cup sugar
1 cup applesauce
1/4 cup vegetable oil
3 egg whites
3 tablespoons milk
2 cups all-purpose flour, sifted before measuring
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1/2 cup chopped pecans or walnuts
Preparation:
In a large mixing bowl combine sugar, applesauce, oil, egg whites, and milk; mix until well blended.
Into another bowl, sift flour, soda, baking powder, salt, and spices. Stir into the first mixture until well blended; stir in chopped pecans or walnuts. Spread batter in a greased and floured 9x5x3-inch loaf pan.
Bake at 350° for 60 minutes, or until a wooden pick inserted in center comes out clean.

Cream

2 apples
Nut bread
Butter
Crystal sugar
Honey
Calvados
Powdered sugar
00:00 Pour the milk and the cream into a salad bowl. Add three eggs. Add vanilla sugar (to do it yourself, put the vanilla seeds into crystal sugar, it will take the taste. Mix.
01:13 Cut the apples, core them and cut them into slices. Put them in a bowl, add crystal sugar and mix. Cut the nut bread into slices. Butter the baking dish. Sprinkle roasted nuts. Put some slices of bread in the dish, add the apples and put bread again. Pour the mix of milk and cream. Put in the oven at 200°C during about 40 min.
04:33 Mix cream and crystal sugar. Add honey and Calvados. Remove the French toast of the oven. Serve.
Moist Apple Carrot Nut Loaf
This recipe makes a moist and delicious nut loaf . If you prefer you can replace the sour cream with yogurt. Also you can add whatever you like to the batter instead of raisins and walnuts , try cranberries or shredded coconut !
