How To make Apple Pie Topsy Turvy
Glaze and crust 1/4 c Firmly packed brown sugar
1 tb Marg. or butter; melted
1 tb Corn syrup
1/4 c Pecan halves
15 oz Pkg refrigerated pie crusts
1 ts Flour
Filling 2/3 c Sugar
2 tb Flour
1/2 ts Cinnamon
4 c Sliced peeled apples
In 9 in. pie pan, combine brown sugar, marg. and corn syrup; spread evenly over bottom of pan. Arrange pecans over mixture in pan. Prepare pie crust according to package directions for two crust pie; place bottom crust over mixture in pan. Heat oven to 425F. In small bowl, combine sugar, 2 T. flour and cinnamon; mix well. Arrange half of apple slices in pie crust-lined pan; sprinkle with half of sugar mixture. Repeat with remaining apple slices and sugar mixture. Top with second crust; seal and flute. Cut slits in several places. Bake at 425 F. for 8 min. or until apples are tender and crust is golden brown.(Place pan on foil or cookie sheet during baking to catch ay spillage.) Loosen edge of pie; carefully invert onto serving place. Serve warm or cold with whipped cream. PILLSBURY -----

Pi Day Cake (3.14)
Anyone heard of the holiday Pi day before? This year I had the privilege of learning about Pi day which is a celebration for math enthusiasts to honor the Greek letter (Π)! The day of celebration is 3/14 which represents the first three significant digits of Pi.
For those that need a refresher, Pi represents the ratio of the circle circumference in relation to its diameter. We use it all the time at the bakery to calculate the circumference of our cakes. For example, when decorating a cake with a ribbon we'll use Pi to calculate the circumference of the cake to figure out how long the ribbon should be.

Making a Cute Topsy Turvy Cake (Inspired by the game Lemon Cake)
Today I'm making the cutest Topsy Turvy cake inspired by the game, Lemon Cake! Enjoy!
????Supplies used in this video:
6” round pans -
8” round pans -
7 square pans
cake cardboards
Fondant 5 lbs-
Flexible Plastic Smoother -
Modeling Chocolate 5 lbs -
16” disposable piping bag -
Ateco piping couplers -
Angled (off-set) Spatula -
Large Rolling pin -
small and medium size ice cream scoops
Americolor or Chef Master Gel food colors
Styrofoam Cutter -
Styrofoam discs -
Cake Drum
Milkshake or Bubble Tea Straws
Wooden dowels from the craft store
Glaze from Portaleo Paints (i didnt mention this in the video, but I glazed the fondant and modeling chocolate on the blueberry and chocolate croissant layers.

Lemon Cake - (2 batches needed)
Lemon Blueberry Cake - (2 batches needed although I don't recommend using this cake recipe under fondant as the blueberries melted my fondant)
Chocolate Chip Cake - (the chocolate chips sank to the bottom but it was still so good!)
Buttercream -
Chocolate Chip Cookies -
Lemon Curd Filling:
2 large eggs, plus 2 egg yolks
1 cup granulated sugar
1 tbsp lemon zest
½ cup freshly squeezed lemon juice (3-4 lemons)
2 tbsp heavy cream
8 tbsp unsalted butter
Lemon Curd: Place a heatproof bowl over a simmering pot of water (bain-marie). The bowl should not touch the water. Place the eggs, sugar, lemon zest, lemon juice and heavy cream into the bowl and cook over medium heat, whisking constantly. The curd is ready to come off the heat when it reaches 170 degrees. This could take up to 20 minutes.
Remove from the heat and strain through a sieve. Add the butter and whisk until completely smooth.
Place the lemon curd in the refrigerator to cool.
