The moist cakey layer of these applesauce bars combine deliciously with the soft creamy sour cream frosting. They are flavorful and autumnal with their cinnamon and apple notes.

Applesauce Bars
1/2 cup butter, softened
1 cup granulated sugar
1 teaspoon vanilla
1 egg
1 1/2 cup all purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cup applesauce
Sour Cream Frosting
1/2 cup butter, softened
2 cups powdered sugar
2/3 cup sour cream
1 Tablespoon vanilla

This “Applesauce Bars” recipe is a family favorite comfort food at holiday time (or any time!). The cake texture combined with the delicious taste of apples, cinnamon, pumpkin pie spice and hint of lemon combined with the crunchy texture of raw walnuts and fresh, crisp apple chunks is divine! Enjoy as a breakfast bread, a snack or dessert!

APPLESAUCE BARS
Serves: 12
INGREDIENTS
•2 c. & 2T flour organic whole wheat flour
•1 c. organic sugar
•½ tsp. salt
•2 tsp. baking soda
•2 T. ground cinnamon
•½ tsp. pumpkin pie spice
•½ tsp. ground cloves
•2 c. applesauce (unsweetened)
•1 c. apples, peeled and diced
•3 eggs
•1 tsp. lemon extract
•¾ c. coconut oil
•⅓ c. walnuts, chopped
INSTRUCTIONS
•Preheat oven to 350°.
•Grease 13 x 9 x 2 pan with coconut oil and flour with the 2 T. of flour. Shake off extra flour.
•In a large bowl, add 2 c. flour, sugar, salt, soda, cinnamon, pumpkin spice, and cloves.
•In another bowl, with an electric mixer, beat melted coconut oil, applesauce, eggs, and lemon extract.
• Add diced apple and walnuts to the wet mixture. Fold into the mixture with a wooden spoon or spatula.
•Make a well in the middle of the dry flour mixture and pour wet applesauce mixture in the middle.
•Mix batter (it will be thick) with the electric mixer until just combined (do not over mix).
•Pour mixture into the baking pan. Bake 25-30 minutes. Insert a toothpick to check if bars are done. (Toothpick will come out clean but moist).
• Let bars cool in the pan for 15-20 minutes, then cut into squares.
•Serve plain and/or with a bit of honey, a dollop of whip cream or vanilla bean ice cream. YUM!

Easy, Quick and Healthy applesauce oatmeal bars!
2 cups oatmeal
1 cup applesauce
Bake at 350 degrees for 10-15mins

APPLE CINNAMON HOMEMADE GRANOLA
INGREDIENTS
2 ½ cups rolled oats
½ cup chopped walnuts
1 tablespoon cinnamon
pinch of salt
1 cup cinnamon apple sauce
¼ cup melted butter
¼ cup raw sugar
1 teaspoon vanilla
INSTRUCTIONS
Combine all ingredients in a bowl and mix well.
Evenly spread on a baking sheet and bake at 350 for 45-50 minutes for a more chewy granola and 50-60 minutes for a crunchier granola.
Stir every 10-15 minutes while baking.

BREAKFAST BARS RECIPE
(makes 12 bars - around 65g each)
Ingredients:
3 cups rolled oats (270g)
1 cup peanut butter (250g)
1/4 cup honey, agave or maple syrup (60ml)
1/4 cup unsweetened applesauce (65g)
1/4 cup lower-in sugar fruit jam (70g)
1/2 tsp salt
NUTRITIONAL INFO (per bar):
231 calories, fat 12.2g, carb 25g, protein 8.1g
Preparation:
First, toast your oats in dry skillet for 3-4 minutes.
In a bowl, mix the peanut butter, your liquid sweetener, applesauce and salt. It should be smooth, so if using solid peanut butter soften over heat for 2 minutes.
Pour the oats into the peanut butter mixture and gently mix with a spatula.
Stir in your favorite fruit jam (preferably homemade or lower in sugar) and mix everything until well combined.
Transfer the mixture into a lined baking pan (I use 8x8 inch or 20x20cm), press with a spatula or using an extra piece of parchment paper.
Place in the fridge to set, for at least 2 hours or even better overnight.
Remove from pan and cut into bars using a sharp knife.
Enjoy!
