How To make Armenian Stew
1 1/2 c Dried Apricots Soaked in
1/2 c Water for 1 Hour.
1/2 c Dried Garbanzo Beans Soaked
Overnight in Water 5 c Water
1 c Lentils
3 Onions Sliced
2 tb Malt Syrup or Molasses
1. in a Large Pan, Bring Soaked Apricots and Their Water To a Boil. add
Soaked, Drained Garbanzo Beans and 1 C. Water. Bring To a Boil and Cook for 30 Minutes. 2. add the Lentils, Onions and 4 C. Water To Pot. Bring To a Boil.
Lower Heat, Cover and Cook Ubout 2 Hours until Garbanzos Are Tneder. add 2 t. Malt Syrup. Mix in Well. Serve Over Brown Rice.

- 1lb dried beans or 3-4 15oz cans (Great Northern/Cannellini beans)
- 2 carrots
- 5 garlic cloves
- 1 large or 2 small onions
- 15 oz can crushed tomatoes
- 6 cups of water
- 2 tbsp. Tomato paste
- 1 tsp cumin
- 3tbsp. Olive oil
- Salt & pepper to taste
- Chopped parsley and green onion for garnish

Armenian Khashlama- Beef Stew with Potatoes and Beer
Traditional Armenian Khashlama is a beautiful combination of beef, potatoes, vegetables enveloped in a sea of flavors. This dish is typically served during the Winter and sadly as a comfort food after the loss of a loved one. This version is made with both beef broth and beer, the beer helps to tenderize as well as neutralize the flavor of the beef. I hope you enjoy my version of this traditional Armenian Beef stew.
Ingredients:
1-2 lbs Oxtail, Beef, or Lamb
5-6 Potatoes
2 large tomatoes
2 Onions
5-6 variety of peppers
1 bunch Cilantro
1 bunch Dill
1 Tbs Pepper Paste
1 Tbs Tomato Paste
1 can or bottle beer of choice
1/2 cup of Oil
3-4 Bayleaves
Salt and Pepper to taste
Aleppo Pepper to taste
Preparation:
Beef can be cooked with water before hand, this way you can use the beef broth and the beef will cook twice for added tenderness
After you have cut the vegetables you may begin assembling at your own discord, does not matter where you begin. After all ingredients have been layered, pour beer as well as beef broth and let cook for 4 hours until beef is falling off the bone. Bone Appetite, happy cooking!!
