INGREDIENTS
4 Tbsp (70 g) sesame paste
4 Tbsp (70 g) creamy peanut butter
2 Tbsp soy sauce (30 ml)
2 tsp rice vinegar
1 clove of garlic grated
1 tsp grated fresh ginger
1/2 tsp Korean red chili powder
1/2 cup (125 ml) water
14 oz fresh egg noddles
INSTRUCTIONS
- In a bowl combine sesame paste, creamy peanut butter, soy sauce, rice vinegar, Korean red chili powder, grated garlic, grated ginger, water and mix until well combined
- Bring 4 to 5 quarts of water to a rolling boil, add fresh egg noodles and cook for 2 to 3 minutes
- Drain cooked pasta and rinse in cold water
- To serve you can pour the sauce over all the cooked pasta, combine well and garnish with julienned fresh cucumber
- This recipe can serve up to 3 servings

The secret ingredient to make your Chinese noodles authentic! Sesame noodles Sichuan style 芝麻面
80g-100g dried Chinese noodles
3 tbsp Chinese soy sauce
2 tbsp Chinese vinegar
2-3 tsp Sichuan chili oil
1 tbsp Lard
1 tsp Sichuan peppercorn oil
1 tbsp chopped green onions
1 tbsp chopped garlic
1 tbsp roasted crushed peanuts
1 1/2 tbsp Sesame paste
3 tbsp Meat topping

Late Night Spicy Sesame Noodles
I had some wine and made some noodles.
I'm not sure why I made a video of it though. This is what happens when I cook at midnight.
Oh, uh in the sauce is chili oil, Sichuan peppercorn, peanuts, soy sauce, chinkiang vinegar, tahini, garlic, scallions, cilantro, sugar.
Noodles are spaghetti cooked in water w/ some baking soda to give them a bouncier texture and alkaline noodle flavor.
OK, I re-made this sober and measured out a basic recipe. It's a version of liang mian, Chinese sesame noodles. If you want to make it tastier, make the chili oil yourself or infuse the oil with the Sichuan peppercorn. This is just the quick and dirty version.
Serves 1
4 ounces spaghetti or cappelini
1/4 teaspoon baking soda
salt
1 teaspoon sichuan peppercorn
1/4 cup peanuts (roast them if you prefer)
1 medium clove garlic, minced
2 tablespoons sesame paste (like tahini)
2 teaspoons soy sauce
1 tablespoon Chinkiang vinegar
2 teaspoons sugar
2 tablespoons Chiu Chow Chili oil
small handful sliced scallions and cilantro
1. Bring a medium pot of water to a boil. Add baking soda and a large pinch of salt. Add pasta. (It might not fit initisally, let is soften a bit then push it all under). Cook until al dente, stirring occasionally.
2. Meanwhile grind Sichuan peppercorns in a mortar and pestle. Add peanuts and pound to crush. Set aside.
3. In a medium bowl, combine garlic, sesame paste, soy sauce, vinegar, sugar, and chili oil, most of scallions and cilantro.
4. When noodles are cooked, transfer them to the bowl using tongs. Stir to sauce them, adding a few splashes of the cooking water until the sauce has a nice loose consistency.
5. Transfer to a bowl, top with remaining cilantro and scallions, and eat.
6. Sleep well.

½ pound dry noodles we recommend Italian linguine (1 pound if fresh noodles used)
1 tablespoon sesame oil
SESAME SAUCE
3 tablespoons tahini
3 tablespoons peanut butter
4 tablespoons soy sauce
2 tablespoons sesame oil
2 tablespoons rice vinegar or lime juice
2 tablespoons sugar
1 teaspoon ginger grated
1 clove garlic grated
2 teaspoons sriracha sauce or ½ teaspoon red pepper flakes
TOPPINGS
1 cucumber thinly sliced
1 mango diced (optional, but recommended)
4 tablespoons roasted peanuts crushed (optional)
2 limes cut into wedges, and squeezed on top
GARNISH (OPTIONAL)
sesame seeds, finely chopped chives or green onion tops

Noodles are a girls best friend and these easy garlic sesame noodles are without a doubt my favorite noodle recipe to date! They require just a few ingredients, are gluten free, ready in 15 minutes, and can be eaten hot or cold!
