How To make Asparagus & Pimento
1 1/4 lb Fresh asparagus;
1 c Water
2 tb Lime juice; fresh
1/4 c Pimento;
1 tb Pine nuts;
Rinse asparagus and snap off tough ends. In a large skillet bring water to boil and add asparagus. Cover and steam until bright grean, 2 to 3 minutes. Remove from heat, drain and arrange on a platter.

Asparagus Pizza by Lars Smith
2020 U.S. Pizza Team Galbani Platinum Champion Lars Smith of State of Mind Public House shows off his Asparagus Pizza. Smith would have represented the USPT, Galbani and the United States at the World Pizza Championships in Parma, Italy, April of 2020. Rather than leave a delicious winner on the shelf, Lars was kind enough to demonstrate this pizza from his own kitchen in Los Altos, CA.

Asparagus Pizza:
13 oz. pizza dough
3 oz. asparagus sauce (recipe follows)
4 oz. Galbani® Thin Sliced Fresh Mozzarella
2 oz. rolled pancetta (thinly sliced)
2 oz. asparagus tips (sliced in half)
1.5 oz. wild arugula
1 oz. asparagus stalk (shaved with a vegetable peeler)
Extra virgin olive oil
Piment D’Ville or Esplette pepper
Galbani Parmesan cheese
Method:
Stretch the pizza dough into a 14” round pie. Top the pie evenly with the asparagus sauce, leaving about a ½” un-sauced crust around the edge. Lay the Galbani Thin Sliced Fresh Mozzarella around the pizza. Top with sliced pancetta, asparagus tips in a small amount of extra virgin olive oil and a pinch of Piment D’Ville. Bake at approximately 570° for 5-6 minutes. Remove from the oven and onto a cooling rack to finish. Place wild arugula in the center of the baked pizzas. Adorn the arugula salad with your shaved asparagus. Drizzle olive oil over entire pizza. Using a micro-plane grater, grate some Galbani Parmesan over the arugula and shaved asparagus.
Finish with a pinch of Piment D’Ville.
Asparagus sauce:
1 bunch of asparagus
2 cloves of garlic
1/4 c. of blanched and peeled almonds
1/4 c. Galbani Parmesan
1/4 c. extra virgin olive oil
1 tbsp. lemon juice
1 tbsp. water
1/2 tsp. salt
Method:
Blanch asparagus in boiling water for 3 minutes then immediately put in an ice bath to cool.
Chop blanched asparagus and put in a blender. Add the rest of the ingredients except the olive oil to the blender and turn on high. Slowly pour in the oil while the blender is running. Blend until smooth. Add more water if the sauce seems to thick.

How to make a Smokey Brunch with Poached Eggs and Asparagus | Pottery Barn
Easter is a perfect time to entertain your guests with some finger licking brunch recipes. In this video chef Joey Altman shows how to make a smoky brunch with poached eggs and asparagus for a perfect brunch date with your loved ones.
To make this recipe, Joey begins with the preparation of asparagus. He cooks asparagus in some olive oil and adds salt and pepper to it. The next step is to prepare the hollandaise sauce which is a mix of egg yolk and butter with some lime juice added to it. In this case Joey adds bacon fat drops and bacon shreds to it to make it tastier.
Once the sauce is ready it is time to poach some eggs. To poach eggs, Joey uses salted water mixed with vinegar drops. After the eggs are poached, the next step is to lay out the cooked asparagus on a platter. In this video Joey uses a three bunny platter from pottery barn. Place poached eggs on top of the asparagus and add hollandaise sauce to it. To make it a perfect brunch, Joey suggests garnishing it with some crispy bacon and pimento before serving it to your guests.
