Opor Ayam originally comes from Java, one of the Islands of Indonesia, it is aromatic, tasty and yummy, best to serve with rice. I hope you enjoy the video and happy cooking ????
Ingredients:
550 gr (6 pcs) chicken thigh fillets
500 ml chicken stock
1000 ml fresh coconut milk thin consistency (I made from 1 whole coconut mix with 800 ml of freshwater)
2 tbsp vegetable oil
1/2 tsp salt
1 1/2 tsp sugar
2 pcs lemongrass stalk
3 pcs Salam leaves (you also can use kaffir lime leaves as a substitute for adding fragrance to the dish )
2 cm (20 gr) galangal
For blend paste:
7 pcs (60 gr) shallots
4 pcs (20 gr) garlic
10 pcs candlenuts
2 tsp coriander seeds
1 tsp cumin seed
1 tsp white peppercorn
1 cm (5 gr) ginger
1/2 cup (120 ml) freshwater
For garnish :
Big red chilli
Kaffir lime leaves
Fried shallots
Bali hot pepper (optional)

Jukut Urab, Balinese style Vegetables with Fresh Grated Coconut and Sambal
Jukut Urab is one of Bali’s most popular vegetable dishes and is easy and quick to make. We often have this for lunch alongside Nasi Campur. In my hometown, we put it on top of Gianyar style porridge (Tepeng) as a side dish. It’s perfect to serve with rice or eat on its own, you can also use other vegetables like cooked broccoli, cauliflower, sweet corn, and green beans. As soon as you mix the vegetables you must eat it straight away because it will spoil quickly as we add freshly grated coconut. If you would like to make this to serve at a party, better to keep everything in the fridge first and mix it together at the last minute. I hope you enjoy the recipe, Happy Cooking ????
Ingredients:
Beans sprouts 150 gr
Cabbage 50 gr
Spinach 50 gr
Snake beans 100 gr
Fresh grated coconut 25 gr
A squizz of kaffir lime fruit juice
Fried shallots 1 tbsp
For Sambal
Shallots 6 (40 gr)
Garlic 4 (20 gr)
Big Red chili 1
Bali hot pepper 2
Salt 1/2 tsp
White sugar 1/2 tsp
Shrimp paste 1/4 tsp
