Easy Homemade Caramel Corn Recipe

It's so fun and easy to make your own homemade caramel corn when you're at home watching a movie or some TV! Popcorn is coated in a brown sugar caramel mixture and it gets nice and crunchy when it cools.
Ingredients:
10 cups prepared popcorn (either microwaved popcorn, or use 1/3 cup unpopped kernels and cook on the stovetop)
8 tbsp unsalted butter (1 stick)
1 cup dark brown sugar (light brown is okay too)
1/4 cup light corn syrup
1 tsp sea salt
1/4 tsp baking soda
Directions:
Preheat the oven to 250 degrees F. If you're not making your popcorn immediately, I recommend keeping it warm in the oven while you make the caramel. You want the popcorn to be warm when you add the caramel, so it spreads easier.
Combine the butter, brown sugar, light corn syrup, and sea salt in a saucepan set over medium heat. Let all the ingredients dissolve and melt together, then bring to a boil. Once it reaches a boil, cook for about 5 minutes until the caramel starts to pull away from the sides of the pan. Quickly stir in the baking soda and add it to the popcorn immediately, and stir as quickly as you can to get the caramel mixture distributed. Once the caramel mixture will no longer spread (because the caramel has cooled down), put the caramel popcorn in the oven for 15 minutes, then take it out and stir it around. You can repeat the 15 minute oven cycles up to 3 more times, if necessary, to get the caramel to warm up and spread. Let the caramel corn cool completely before eating, because that will help it get crunchy. Enjoy!
