3/4 c Any Flavor Wheat Germ
1/2 c Sugar
2 ts Baking Powder
1/2 ts Baking Soda
1/2 ts Salt (optional)
3/4 c Raisins or Chpd Dried Figs
1 Egg and 2 Egg Whites
1/3 c Vegetable Oil
1 c Mashed Ripe Bananas (about2)
3/4 c Orange Juice
2 ts Grated Orange Peel
1 ts Vanilla
Heat oven to 350?F. Spray 9 x 5-inch loaf pan with non-stick cooking spray. In a large bowl combine dry ingredients, mixing well; add to dry ingredients. Mix just until moistened. Pour into prepared pan. Bake 60 to 70 minutes or until wooden pick inserted in the center comes out clean.

No-Knead Cranberry Walnut Bread with Honey
Ingredients
* 3 cups all purpose flour, plus 3 tablespoons
* 1/2 teaspoon instant yeast
* 2 teaspoons sea salt
* 1/2 cup chopped walnuts
* 1 cup dried cranberries
* 1 1/2 cups water at room temperature
* 2 tablespoons liquid honey, plus more for brushing on after baking or other vegan honey substitute
Instructions
* Start with a large bowl and a wooden spoon, and add your flour to the bowl. Measure the yeast and add it to one side of the bowl. Measure the salt and add it to the other side.
* Using a wooden spoon, stir the yeast into the flour on its side of the bowl first and then stir the salt into the flour on its side of the bowl. This will prevent the salt mixing directly with the yeast. Give the whole mixture a few good stirs to make sure everything is combined.
* Add the cranberries and walnuts to the flour mixture and toss well to coat, and to make sure they're distributed evenly throughout.
* Measure the water. Make sure the water is at room temperature; water that is too warm or too cold can kill the yeast and prevent the bread from rising at all. Add the honey to the water and stir with a fork to combine.
* Pour the water in and stir with a wooden spoon. The dough will be rough and a bit sticky, but that's normal.
* Stir until all the flour is combined. This is not normal bread dough (there's no kneading involved in this recipe), so you don't need to be too concerned about the appearance of the dough at this point. Just make sure the ingredients are combined well.
* Cover the bowl with plastic wrap. It's a good idea to ensure there's adequate space left in the bowl for the dough to at least double in size. Place the bowl in a warm, draft-free place and let it rise for 12-18 hours.
* After the dough has risen for 12-18 hours, preheat your oven to 425 degrees Fahrenheit (if you're using convection, 410 degrees. If your oven runs hot, 400 degrees). Place your Dutch oven with the lid on in the cold oven and let it heat up with the oven. If your dutch oven is black or dark-coloured on the inside, set your oven to 400 degrees Fahrenheit instead of 425. I recommend a 6 or 7-quart dutch oven for this recipe.

How To Make Banana Raisin Bread At Home || Anjali Pathak|| Baking Made Easy
For this week's Sunday brunch Anjali Pathak brings you her dad's favourite dessert recipe, Banana Rasin Bread. Follow Anjali's simple steps and easily impress all your guests. Happy baking to you! :)
Serves 10 - 12
Ingredients:
juice of 1 orange or 50ml bourbon
75g raisins
115g butter
150g brown sugar
2 eggs
250g overripe bananas, peeled and mashed (around 3 large bananas)
175g plain flour
2 teaspoons baking powder
½ teaspoon baking soda
1kg loaf tin, lined with parchment
Process:
1. Preheat the oven to 170°C / 325°F / gas 3.
2. Pour the orange juice (or bourbon) into a small pan and add the raisins. Heat gently for a few minutes before turning off the heat and allowing them to soak up the liquid.
3. Melt the butter and pour into a large mixing bowl. Add the brown sugar and mix well.
4. Crack in the eggs one at a time, beating well before adding the next.
5. Stir in the bananas and raisins and sift over the flour, baking powder and baking soda.
6. Fold together until there are no traces of flour and pour into the lined loaf tin.
7. Bake in the oven on the middle shelf for 45 - 50 minutes, or until a skewer comes out clean.
8. Allow to cool in the tin before wrapping well and slicing whenever you fancy a sweet treat.
Anjali’s Secret :
The banana raisin cake is best eaten after a day, after it's had time to mature. This bread freezes very well. Wrap each slice in cling film before popping in the freezer, defrosting individual slices whenever you need them.

3 medium ripe bananas
1 egg
1/2 cup granulated sugar (100g)
1 tsp vanilla
1/3 cup melted butter (80g)
1 1/2 cups all-purpose flour (180g)
1 tsp cinnamon powder
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup additional add-ins (optional) chopped nuts, dried fruits, or chocolate chips

How to Make Orange Raisin Loaf
1 Large or 2 medium oranges
Squeeze the juice from the orange and add more juice or water to make 1 Cup of liquid
Put the orange rind through a meat grinder or food processor with 1 Cup of Raisins
Add liquid to orange rind mixture
Add 2 TAblespoons butter
1 Teaspoon vanilla
1 Egg
1 Cup sugar
Fold in Dry ingredients
2 Cups All purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
Pour into loaf pan and bake at 300 F for 1 1/2 hours until toothpick comes out clean.
