This week I want to share with you my version of Steakhouse Chops.
I’m starting with a center cut portion of pork loin.
I’m cutting the loin into extra thick portions then butter-flying each piece into one large, thick-cut chop.
Each chop is generously seasoned with my Killer Hogs AP Seasoning (Salt, Black Pepper, and Garlic) then layered with coarse ground Killer Hogs Steak Rub. Let the chops rest for 30 minutes and fire up the grill.
For this cook I’m using my charcoal grill (won this beauty last week at an SCA contest!) but any charcoal or gas grill will do the job. Fill a charcoal chimney with fresh coal and use a couple wax starter cubes to get it going. When the coals are hot, pour them onto one side of the fire grate leaving a void on the opposite side. (This creates a 2 zone fire)
The big secret to these chops is using a set of GrillGrates. These grates are designed to even out heat and produce sear marks without the flare ups. Chefs have been using similar grates in steak houses for a long time, and now you can duplicate the same style right at home.
Lightly spray the GrillGrates with cooking spray and lay each chop on the direct heat side of the grill. If you’re doing multiple chops work in batches. Set a timer for 2 minutes then twist the chops 90⁰ and cook an additional 2 minutes.
Now flip the chops over and move to the indirect side of the grill. By doing this, we slow down the cook in order for the chops to cook more even. It’ll take another 10-15 minutes, and you’ll need a good instant read thermometer to judge doneness.
The chops are finished with a Bourbon Butter glaze, here’s the recipe:
Bourbon Butter Glaze:
- ½ stick Salted Butter
- ¼ cup Brown Sugar
- ¼ cup Honey
- 1 Tablespoon Dijon Mustard
- 1 shot of Kentucky Bourbon
In a small sauce pot over medium heat add butter, brown sugar, honey, bourbon, and Dijon mustard. Stir until combined and reduce by half about 8 minutes. Remove from heat and allow to cool.
When the chops hit 130 internal, move each one to the direct heat side of the grill and baste with the glaze. Continue grilling for 2-3 minutes or until the internal temperature hits 135⁰ for medium doneness. (cook it longer if you want it more done). Then rest each one for 5 minutes before serving.
These Chops are good enough to be on the menu at any steak house; you’ll want to give this recipe a try!

2 pork chops 2-inch thick bone-in (high-fat content preferred)
1 1/2 tbsp avocado oil
2-3 cloves smashed garlic
10 sprigs thyme
5 sprigs sage
2 tbsp unsalted butter
salt and pepper to taste
Balsamic orange glaze:
1 cup orange juice
1/3 cup balsamic vinegar
7 tbsp cold unsalted butter
salt and pepper to taste
Directions:
1. Start by patting your pork chops dry and rubbing with a little oil followed by your salt and pepper.
2. on medium-high heat sear the fat cap of the pork chops for 2-3 minutes or until golden brown.
3. flip them onto 1 side and sear for 4 minutes or until golden brown
4. flip them over and sear for another minute before dropping the heat all the way down to low.
5. add garlic, thyme, sage, and unsalted butter, and when it is melted and foaming being basting over the pork chops for an additional 4 minutes.
6. remove pork chops and fat from the pan before adding the orange juice and reducing by 50%
7. add the balsamic vinegar and reduce again by around 50% or until the sauce starts to thicken
8. add the cold pieces of unsalted butter little by little and finish the sauce with salt and pepper to taste.

What you will need to make these BBQ Pork Chops is:
3 Boneless Pork Chops (or as many as you need)
Pork BBQ Rub
1 apple sliced
BBQ Sauce
***HOW TO MAKE THIS RECIPE***
BBQ Pork Chops Step #1
First, you will need to prepare pork chops. You can buy them pre cut or slice them to whatever thickness you desire using a pork loin roast.
BBQ Pork Chops Step #2
Next apply your bbq rub to both sides of the chop making sure that there is an even coating all around. Let this sit for about minutes while you finish getting your grill set up for direct cooking at around 400 degrees.
BBQ Pork Chops Step #3
Once you Grill is up to tempreture, place your boneless pork chops directly over the coals. If you are using chops that are around 1 inch thick this should only take you about 3.5 to 4 minutes per side. Halfway through, give your chops a flip and apply some BBQ sauce to the top. This will give added flavour and give it a nice visual look.
BBQ Pork Chops Step #4
After about 7-8 minutes of total cooking time your BBQ Pork Chops should be done. It is important to cook them to an internal tempreture of around 138-140 degrees. We used our favourite meat thermometer to make sure that ours were cooked to the perfect temp. -- ( see it here: )

Once your chops are finished and off the grill let them rest for about 5-7 minutes. While they are resting, place your apple slices on the grill to char flipping once. This should take a total time of about 4-5 minutes. When all these step are done, grab a fork and knife and start feasting!

✅Instructions
00:00:17 - How to choose a pork chop cut
1️⃣ 00:01:10 - Heat an outdoor grill to high heat, about 500 degrees Fahrenheit.
2️⃣ 00:01:15 - Prepare your chops by rubbing both sides with olive oil.
3️⃣ 00:01:27 - In a small bowl, stir together paprika, salt, and pepper. Sprinkle the mixture on each side of the pork chops and rub it in.
4️⃣ 00:01:51 - Grill the chop by searing each side for 2 minutes over the high heat. Remove the chops to an upper rack or to a spot with indirect heat to finish cooking.
5️⃣ 00:02:04 - Reduce the burners to medium, close the lid, and cook for about another 15 minutes more. Actual cooking time will depend on the heat of your grill and the thickness of your pork chop. Pork needs to be cooked to an internal temperature of 145 degrees Fahrenheit.
6️⃣ 00:02:39 - Let rest 5 to 10 minutes before serving.
