How To make Bbqed Chile Marinated Pork Spareribs
2.00 Racks
8.00 Dried
Seeded 0.75 c Hot water
0.50 c Ketchup
2.00 Cloves garlic
0.50 c Cider vinegar
3.00 tb Brown sugar
firm packed
2.00 ts Salt
3.00 tb Tequila
0.50 c Veg. oil
0.50 ts Cumin
0.13 ts Allspice
Pork spareribs New mexican red chiles :
In a large kettle combine the spareribs with water to cover, bring the water to a boil and simmer the ribs skimming the froth as necessary, for about 50min. Drain the ribs well and pat them dry.
While the ribs are simmering, in a blender puree the chiles,water, ketchup, garlic, vinegar, brown sugar, salt, tequila. oil, cumin and the allspice. In a jelly roll pan or on a tray coat the ribs generously with some of the chili sauce, reserving the remaining sauce in a small bowl, covered with plastic wrap and chilled for a least 8 hours or over night.
Let the ribs stand at room temp. for 1 hour and grill them on an oiled rack set 5-6 over heat source for 6 min. on each side In a small saucepan simmer the reserved chile sauce for 3 min. and serve it with the ribs.

Simple Filipino- style bbq pork ribs simmered in an easy homemade barbecue sauce. With no oven or grill and with only a few ingredients. Seared the ribs then add the mixed barbecue sauce plus water in a wok or cooking pot and let them slow cooked for 1 1/2 hour to 2 hours until the pork ribs is tender. The resulting pork ribs were so tender and the sauce is thick and flavourful. Serve with rice or corn on the cob. Enjoy!
INGREDIENTS:
- 1 1/2kg pork ribs, cut into serving portions
- 1 cup pineapple juice
- 1/2 small size lemon or 3 pieces calamansi
- 1/2 cup banana ketchup
- 1/4 cup bbq marinade ( mama sita's bbq marinade or you can use any brand of your choice )
- 4 teaspoons soy sauce
- 3 to 4 drops worcestershire sauce
- 3 teaspoons sugar ( adjust to your taste )
- 3 cloves garlic, peeled and crushed
- 1 1/2 cups water ( add more if needed )
- 2 pieces dried chili ( adjust to your taste )
* Slow cooked on low heat for 11/2 to 2 hours until the ribs is tender.

As a BBQ man I personally enjoy traditional Texas style spare ribs. A sharp contrast to sweet, St. Louis style ribs that are so common in the competition BBQ world. If you have ever been to a Texas BBQ joint then you have probably had a really long pork rib that has not been trimmed down to a St. Louis cut rib.

Ingredients:
pork ribs - 800 g (28.2 oz)
salt - 10 g (0.35 oz)
black pepper - 5 g (0.18 oz)
thyme - 15 g (½ oz)
oil - 20 ml (0.7 fl oz)
Cook over low fire for 15 min
onion - 400 g (14 oz)
salt - 10 g (0.35 oz)
smoked paprika - 10 g (0.35 oz)
herbs of Provence - 10 g (0.35 oz)
Cook over low fire with lid for 35 min
mashed potatoes - 350 g (12.35 oz)
