Black bean pate (vegan, oil free)
BLACK BEAN PATE (VEGAN, OIL FREE) - this is such an easy and delicious recipe you can whip up in no time! And what is even better that the recipe does not contain any oil.
Ingredients:
11/4 cup black beans, drained
3/4 cup pecans (or walnuts)
1 garlic clove, crushed
A handful of fresh parsley
11/2 Tbsp soy sauce
1 Tbsp lemon juice
2 tsp smoked paprika
1/2 tsp cumin powder
1/2 tsp salt
Pepper, to taste

Mixed Bean Pate on Homemade crusty bread and fresh salad (Friendly Food for Diabetics/ Vegetarians)
This delicious pate, is very simple to prepare. You will need a food processor. I am using a mini chopper which is also sufficient to blend.
Ideal for Diabetic and Vegetarians with low carbohydrate and high in protein.
Ingredients :
One can of Mixed beans (400g drained and rinsed)
4 tablespoon Creme Fraiche
4 Tablespoon chopped mixed herbs ( Parsley and Corriander)
1 Tablespoon Olive Oil (extra for drizzle)
Salt and Pepper to taste.

Recipe: Roasted Carrot & White Bean Pate
This is a super delicious recipe! Easy to make. Great for the upcoming holidays. Fat-free too! Enjoy.
Recipe:
2 cups peeled and chopped carrots
1 small onion, chopped into big pieces
1 ½ cups white beans (or 1 can)
1 roasted red pepper (I used jarred peppers)
½ cup raw walnuts
1 tablespoon balsamic vinegar
1 teaspoon soy sauce
4 cloves garlic, minced
1 teaspoon dried basil
2 teaspoons smoked paprika
Salt & Pepper to taste
*Optional: I drizzled a bit of lemon juice in to keep the carrots from oxidizing too much -- not sure if it will work It's my first try on this technique.
Preheat oven to 400 degrees. Place carrots & onions on a baking sheet. Drizzle with olive oil if you choose and stir to coat (I do not use the oil in my version)
Roast veggies for about 25 minutes until tender and edges of onions are browned.
In a food processor, place the roasted veggies and all remaining ingredients. Pulse until a nearly smooth texture – but not creamy. Test the texture. I don’t make it smooth and creamy – mine has a bit of texture. But it a personal preference!
Chill for several hours. Serve with crackers, veggies or whatever type of “vehicle” you like!
I double the batch and freeze it up in serving sizes.

Spicy Mung Bean Pate Recipe
Ingredients
1 lb cauliflower florets, trimmed
1 1 piece ginger, chopped
2 jalapeno peppers, seeded & -- choppe; d
3/4 cup water, as needed
1 cup split mung beans, soaked
3 tablespoon cilantro, chopped
1/2 teaspoon coriander
1 teaspoon cumin
1/4 teaspoon turmeric
1/4 teaspoon baking powder
3 tablespoon arrowroot
1 teaspoon salt
1 freshly ground black pepper
1 1/2 tablespoon extra-virgin olive oil
1 olive oil spray
Method:
Preheat oven to 350F. Shred cauliflower; transfer to a mixing bowl. To a running food processor, add ginger & chilies, mince. Add water & drained mung beans. Process until smooth. Scrape puree into the bowl with the cauliflower & the remaining ingredients, except for the oil spray.
Generously mist a 12-cup muffin pan with oil or a 9 X 5 X 3 loaf pan. Spoon mixture into oiled pan, smoothing tops. Bake tarts for 45 minutes & loaf for 1 to 1 1/4 hours. Cool for 5 minutes on a rack & then unmould.
