How To make Beef& Broccoli
DAVE SAWYER RJHV41A 1/2 teaspoon Brown sugar***
1 BONELESS BEEF*
1 teaspoon Cornstarch
dissolved in ***
1 tablespoon Oyster sauce**
2 tablespoon Water***
2 teaspoon Rice wine**
3 tablespoon Peanut oil
1/2 teaspoon Brown sugar**
2 Slices ginger :
minced
2 teaspoon Cornstarch**
1/2 teaspoon Salt
1 pound Broccoli -- chopped
1/4 cup Water
2 teaspoon Rice wine***
2 teaspoon Sesame oil
*(Flank steak, top sirloin, or tenderloin), sliced across grain into thin slices **(combine all marinade ingredients in a bowl) ***(combine all seasoning sauce ingredients in a cup) Thoroughly mix beef with marinade and marinate for 30 minutes. Heat wok over highest heat, when hot, swirl in 2 Tblsp peanut oil. Add ginger and salt and toss a few seconds. Add broccoli and stirfry one minute, then add water, turn heat to med-high, cover, and steam until crisp tender. Uncover and turn heat to high, stir frying until water is evaporated. Remove broccoli and reserve. Reheat same wok (without rinsing) and, when hot, add remaining peanut oil. Add beef slices and stirfry until lightly browned but not cooked through. Do not stirfry too vigorously or meat will not brown, it is better to press slices against sides of wok to sear. Add broccoli to wok and toss. When hot, stir in seasoning sauce and stir until sauce thickens (it's a good idea to whisk the sauce in the cup just before you hurl it into the wok). Turn onto a 02/24/92 4:15 PM platter and drizzle sesame oil over the top.

You can totally use store-bought char siu instead with this Chinese recipe, but I promise you the extra step to make your own (and it’s literally just a case of bunging ingredients in a bowl and mixing them) and absolutely worth going the extra mile. Seek out maltose and red fermented tofu from an Asian grocery store, as they totally maketh the dish. This is one beef and broccoli stir-fry you need on repeat!

1.5lb Flank Steak
1/2c Soy sauce
1tbs Baking soda
2tbs Corn starch
Salt and pepper
3-4c Broccoli
Sauce:
1/2c Oyster sauce
1/2c Beef broth
2tbs Rice wine vinegar
1tbs Sesame oil
2tbs Corn Starch
Cooking:
3tbs Grapeseed oil
2tbs Garlic

Easy and Delicious Beef and Broccoli Recipe
Tender beef steak, stir-fried with broccoli and a heavenly Chinese-style stir fry sauce. Simple, quick and delicious!
It's ready in 20 minutes, so this beef and broccoli stir fry makes a great mid-week meal for the family.

Ingredients for this Beef And Broccoli:
▢3 tbsp vegetable oil - (or swap for any other high smoke point flavourless oil)
▢500 g (1.1lbs) skirt/flank steak - sliced very thinly, against the grain *Tip 1
▢450 g 1lb tender stem broccoli - (broccolini) any thicker pieces sliced in half length-ways
▢1 tsp minced ginger
▢2 cloves garlic - minced
Sauce Ingredients:
▢250 ml 1 cup + 2 tsp hot beef stock (water + 1 stock cube is fine)
▢3 tbsp light soy sauce
▢1 tbsp dark soy sauce
▢1 tbsp Chinese rice wine - you can swap for sherry if you like
▢2 tsp sesame oil
▢3 tbsp light brown sugar
▢⅛ tsp white pepper
▢⅛ tsp black pepper
▢2 tbsp cornflour - cornstarch, mixed with 5 tbsp cold water to make a slurry
To finish:
▢1 tsp sesame seeds
Top Tips:
Tip 1 Freeze the Steak - just a little
Place the steak in the freezer for 10-30 minutes before slicing. This will make the meat firmer and easier to slice thinly.
Tip 2 - Fry the broccoli for longer if you like it softer
We want the broccoli for this dish to be tender, but still bright green and with a bit of crunch. If you like your broccoli softer, stir fry for an extra couple of minutes. You can add a tablespoon of water to help it cook quicker and more evenly. Then be sure to transfer the broccoli as well as any liquid left in the pan to the bowl – don’t leave any water behind or it will spit when you add oil to the wok for the next step).
Cut of Beef:
I like to use Beef skirt/flank as it's a fairly inexpensive cut of meat with good flavour. It does have to be cut thinly though. If it's cut too thick, it will be chewy.If you prefer you can use sirloin or ribeye steak. These cuts are more tender (and more expensive!) - so they can be cut a little thicker if you prefer.
