Recipe in English:
Ingredients:
-Boneless beef undercut (cut into 1-inch pieces) 750g
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) chopped 1 & ½ tbs
-Paprika powder 1 tbs
-Namak (Salt) 1 tsp or to taste
-Dhania powder (Coriander powder) ½ tbs
-Lehsan powder (Garlic powder) ½ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Zeera powder (Cumin powder) 1 tbs
-Onion powder ½ tsp
-Lemon juice 2-3 tbs
-Hara dhania (Fresh coriander) chopped handful
-Fresh parsley chopped handful
-Red bell pepper cubes
-Pyaz (Onion) cubes
-Lemon slice
-Shimla mirch (Capsicum)
-Cooking oil 2-3 tbs
Directions:
-In a bowl,add beef,onion,garlic,paprika powder,salt,coriander powder,garlic powder,black pepper powder,cumin powder,onion powder,lemon juice,fresh coriander,fresh parsley and mix well,cover & marinate for 3-4 hours.
-Thread the wooden skewer with red bell pepper,marinated beef cube,onion,beef cube,lemon slice, beef cube,capsicum,beef cube,lemon slice,beef cube,onion,beef cube & red bell pepper (makes 8-10).
-On grill pan,add cooking oil and grill skewers on low flame from all sides until done (10-12 minutes).
-Serve with pita bread & salad.

-Wooden skewer per red bell pepper,marinated beef cube,pyaz,beef cube,lemon slice,beef cube,shimla mirch,beef cube,lemon slice,beef cube,pyaz,beef cube & red bell pepper laga lein (makes 8-10).
-Grill pan mein cooking oil dal dein aur skewers ko halki ancch per tamam sides sa golden brown hunay tak grill ker lein (10-12 minutes).
-Pita bread & salad ka saath serve karein.

Ingredients:
Chicken thigh mince 1kg (1000g)
Onion 1 medium
Red bell pepper 1 medium (150g-170g)
Parsley or Coriander chopped 1 cup
Salt 3/4 tbsp or to taste
Chilli flakes 1 tbsp
Paprika powder 1 tbsp
Green chilli paste 1 tbsp OPTIONAL (use fresh)
Garlic paste 1 tbsp (use fresh)
Oil 2-3 tbsp
For Salad:
Red Onion 1 large thinly chopped in slices
Tomato 1 large
Parsley or Coriander 1 cup
Sumac powder 1 tbsp (substitute of sumac powder is Pomegranate powder or fresh Lemon juice)
Salt 1 pinch
Cooking Time 15 -20 mins
Cooking Time on charcoal grill is 8 -10 mins
DO NOT OVER COOK THE KEBAB, KEEP THEM JUICY
This quantity makes 10-12 medium size kebabs.Kebab should be 10 inches long.
Serving 5-6 People
مكونات:
أوراك دجاج مفروم 1 كجم (1000 جم)
بصل 1 وسط
فلفل أحمر 1 متوسط (150 جم -170 جم)
1 كوب بقدونس أو كزبرة مفرومة
ملح 3/4 ملعقة كبيرة
أو حسب الرغبة رقائق الفلفل الحار 1 ملعقة كبيرة
مسحوق الفلفل الحلو 1 ملعقة كبيرة
معجون الفلفل الأخضر 1 ملعقة كبيرة اختياري (استخدم طازج)
معجون الثوم 1 ملعقة كبيرة (استخدم طازج)
2-3 ملاعق كبيرة زيت
للسلطة:
1 بصلة حمراء كبيرة مفرومة ناعماً إلى شرائح
طماطم 1 كبير
1 كوب بقدونس أو كزبرة
مسحوق السماق 1 ملعقة كبيرة (بديل مسحوق السماق رمان او عصير ليمون طازج)
ملح 1 رشة
وقت الطهي 15-20 دقيقة
مدة الطهي على شواية الفحم هي 8-10 دقائق
لا تطبخوا الكباب أكثر من اللازم ، واحتفظوا بعصائرهم
هذه الكمية تجعل 10-12 كباب متوسط
الحجم ويجب أن يكون طول الكباب 10 بوصات.
يخدم 5-6 أشخاص

Perfect Middle Eastern Kofta Kebabs!

Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.
