TOMATO MEAT ROLLS CASSEROLE

DOUGH
250 gr flour (all-purpose flour)
3 gr salt (½ teaspoon)
20 ml sunflower oil
135 ml water
MINCE MIXTURE
500 gr minced meat
4 gr salt (⅔ teaspoon)
3 gr paprika powder (1 teaspoon)
1.5 gr black pepper (½ teaspoon)
2 gr cayenne pepper (⅔ teaspoon)
3 gr garlic powder (1 teaspoon)
5 gr onion powder (1⅔ teaspoons
2 gr Italian seasoning (1 tsp)
25 ml olive oil
100 gr yellow onion (1 yellow onion)
20 gr fresh parsley
TOMATO SAUCE
300 gr strained tomato sauce
175 ml water
2 gr Italian seasoning (1 teaspoon)
3 gr salt (½ teaspoon)
15 gr honey (1 tablespoon)
TOPPING
grated cheese
Put the flour with the salt, sunflower oil, and water in a deep bowl. Mix and knead until smooth. Cover the dough and let it rest for a while.
Peel the yellow onion and chop it roughly. Put the yellow onion and parsley in a food processor. Don't grind them too finely.
Put the minced meat, salt, paprika powder, black pepper, cayenne pepper, garlic powder, onion powder, Italian seasoning, and olive oil in a bowl. Mix well and set aside.
Divide the dough into 4 pieces (100 grams each) and shape them into balls.
Take one ball of dough and place it on a floured work surface. Roll out the dough into a square sheet measuring 32x30 cm.
Spread some minced meat over it (about 160 grams). If desired, sprinkle some grated cheese over it.
Roll up the dough and seal it tightly.
Cut the dough into pieces.
Place the minced meat rolls in an oven dish.
Put the strained tomato sauce together with water, Italian seasoning, salt, and honey in a bowl. Mix until it becomes smooth.
Pour the tomato sauce over the minced meat rolls.
Cover the oven dish with a sheet of parchment paper and then a sheet of aluminum foil.
Place the oven dish in a preheated oven at 200 ℃. Bake for 25-30 minutes.
Carefully remove the oven dish from the oven, remove the aluminum foil and parchment paper. Sprinkle grated cheese on top.
Bake the dish for another 7-10 minutes or until the cheese is completely melted.

I know vegetables can be boring, but these are incredibly easy and delicious perfect to accompany any protein. The best part is that you can mix and match your veggies and use your favourite ones. Some more options could be bell peppers, asparagus, cauliflower, Brussel sprouts, or anything your heart desires. Feel free to use any oil of choice and as much as you like according to your lifestyle. There is no specific measurements as you can use as much vegetables as you like or enough to fit the sheet pan rows. You will need:

baby potatoes quartered
1/2 an onion quartered
1 zucchini cut into circles
1-1.5 cups broccoli florets
3/4 cup organic baby carrots
1 cup mushrooms
1-2 tablespoons avocado or olive oil
salt, pepper, dry oregano to taste

Please note: Feel free to use any vegetables you love. You can use any oil but I like olive oil or avocado oil. If you want a more nutty but flavour you are also more than welcome to add some grated Parm as well.

Line a baking sheet with parchment paper so that we can have a mess free side dish. Cut all of your vegetables into equal pieces and arrange each vegetable into individual rows. Sprinkle with salt pepper and dry oregano and the oil. Massage each row and roast in a pre-heated 425F oven for 25-30 minutes or until soft roasted and caramelized. Enjoy and follow for more.

Here's a very easy and super delicious recipe for Greek beet salad. This roasted beet salad features feta, olive oil & oregano and a splash of the vinegar of your choice. You can serve this warm or cold and preparation is a snap as you can make this ahead of time thus giving you more freedom to socialize.
INGREDIENTS LIST
* 6-10 beets
* 1/4 cup Greek extra virgin olive oil
* 2 cloves garlic
* 3-4 tbsp. red wine or balsamic vinegar

This is a classic Ukrainian Borscht Recipe, just like Mom used to make. I love the deep ruby color of this borsch; so healthy and nutritious. Dinner is served!

Ingredients For Borscht (борщ) Soup:
►3 medium beets peeled and grated
►4 Tbsp olive oil divided
►4 cups reduced-sodium chicken broth + 6 cups water
►3 medium Yukon potatoes peeled and sliced into bite-sized pieces
For Borsch Zazharka (Mirepoix):
►2 celery ribs trimmed and finely chopped
►2 carrots peeled and grated
►1 small red bell pepper finely chopped, optional
►1 medium onion finely chopped
►4 Tbsp ketchup or 3 Tbsp tomato sauce
Additional Borscht Flavorings:
►1 can white cannellini beans with their juice
►2 bay leaves
►2-3 Tbsp white vinegar or to taste
►1 tsp sea salt or to taste
►1/4 tsp black pepper freshly ground
►1 large garlic clove pressed
►3 Tbsp chopped dill
