Super moist and soft Banana Bread Mary Berry's Recipe/relaxing baking

Ingredients
2 ripe bananas
2 tbsp milk
100 g baking spread
150 g plain flour
150 g caster sugar
1 tsp baking powder
1 tsp baking soda
2 eggs
100 g dark chocolate chips
Instructions
You will need a 900g (2lb) loaf tin, 17 x 9 x 9cm (6½ x 3½ x 3½in) base measurement.
Lightly grease the loaf tin and line it with non-stick baking parchment.
Pre-heat the oven to 180°C/350°F/Gas Mark 4.
Measure all the ingredients into a mixing bowl and beat for about two minutes, until well blended; an electric mixer is best for this but of course can also beat by hand with a wooden spoon.
Spoon the mixture into the prepared tin and level the surface.
Bake for about an hour, until well risen and golden brown. A fine skewer inserted in the centre of the cake should come out clean.
Leave the cake to cool in the tin for a few minutes, then loosen with a small palette knife and turn the cake out. Remove the lining paper and leave on a wire rack to cool completely. Slice thickly to serve.

Mixed Berry Loaf Bread | Easy Loaf Bread Recipe
This mixed berry loaf bread recipe is packed with berries, very moist, and topped with a buttery crumb topping! This mixed berry loaf bread is very easy to make and comes together in only a few minutes. You can use fresh or frozen berries of your choice to make this moist and delicious mixed berry loaf bread. You can spread some butter onto this mixed berry loaf bread or eat it plain for breakfast, an afternoon snack, or dessert.
Mixed Berry Loaf Bread Ingredients
3 cups all-purpose flour
1 tbsp all-purpose flour
1/2 cup granulated sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/8 tsp salt
1/3 cup vegetable oil
1 tsp vanilla extract
2 eggs
1 1/4 cup 2 % milk
2 cups mixed berries (fresh or frozen)
Crumb Topping
1/2 cup all-purpose flour
1/2 cup granulated sugar
2 tbsp brown sugar
4 tbsp unsalted butter (cold & diced)
Directions
1. In a large bowl of a hand or stand mixer, add granulated sugar, vegetable oil, 2 eggs, one at a time, and vanilla extract and mix with a paddle attachment. Start adding the all-purpose flour to the wet ingredients in small increments until it is all added and continue mixing.
2. Add salt, baking soda, baking powder, ground cinnamon, and milk, and continue mixing the ingredients. The mixture should have a cake batter like consistency.
3. In a small bowl, lightly coat the berries with all-purpose flour to prevent them from sinking to the bottom of the mixture. You can use fresh or frozen berries in this loaf cake. Add the berries into the mixture and gently fold them in. Once you start to see color in the mixture, stop mixing, so the berries are still intact.
4. Pour the batter in a greased 9 x 5 inch loaf pan. Smooth out the top to create a nice flat surface for the crumb topping.
5. Make the crumb topping by adding granulated sugar, brown sugar, all-purpose flour, and diced cold butter into a bowl. Using your hands or a pastry cutter, mix these ingredients together until you have a crumb consistency. Sprinkle the crumb topping onto the loaf cake, covering the entire top of the cake.
6. Bake the loaf cake in a 350 °F preheated oven for about 45 minutes or until a toothpick comes out clean.

Mostly Whole Wheat and Honey Bread by Ellen Walker Hoffman

Make in a 2 pound capacity bread machine on dough course.
345g water or milk or half and half
85g honey
132g bread flour
419g whole wheat flour
28g dry milk (eliminate if you used milk instead of water)
57g regular (salted) butter
7g salt
7g SAF INSTANT YEAST
130g slightly ground cooked wheat berries added at ADD beep
Optional: Add about 1/4 cup seed meal on top of flour. Add 1/4 cup of various seeds at add beep.
Add seeds on top after egg wash.
I use the dough cycle. Dump out of bread pan onto oiled cutting board or solid surface. Shape and put in loaf pan sprayed with nonstick spray. Turn on oven to 170 and turn off in one minute. Let rise in the slightly warmed oven for 45 minutes. Take out, preheat oven to 350. Egg wash (sprinkle with seeds if desired) and bake for 30 minutes. (Watch after 20 minutes to make sure it doesn’t get too brown.
Cool 2-3 hours, slice, put in heavy duty plastic freezer bag and freeze same day as baked to preserve freshness. Take out slices as needed to defrost or toast.
For wheat berries:
Grind one cup of wheat berries just a bit in a small coffee grinder, a little at a time.
Put in pot with three cups of water, and boil/simmer for an hour.
Refrigerate until you’re going to use in bread.

BAKE 350ºF, 55 minutes.
