How To make Best Ever Pancakes Or Waffles
1/2 c All-purpose flour
1/2 c Whole wheat flour
1 tb Granulated sugar
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Ground cinnamon
1/4 ts Salt
1 c Buttermilk
-OR 3/4 c Plain yogurt
-PLUS 1/4 c Water
1 lg Egg
2 tb Mild olive or vegetable oil
Oil for cooking Griddle, large skillet, -or waffle iron (From "Pancakes and Waffles" by Elizabeth Alston. HarperCollins; $12.50; 1993.)
Food processor method: Put the flours, sugar, baking powder, baking soda, cinnamon and salt into a food processor. Process briefly to mix. Add the buttermilk, or yogurt and water, egg and oil. Turn the machine on-off (pulse) 3 or 4 times to make a smooth batter. By hand method: Put the flours, sugar, baking powder, baking soda, cinnamon and salt into a large bowl. Stir to mix well. Measure the buttermilk in a 2-cup glass measure. Add the egg and oil to the measuring cup. Beat with a fork or wire whisk to blend. Add to the flour mixture and stir to form a smooth batter. For pancakes: Heat the griddle or skillet over moderately high heat until it feels hot when you hold your hand directly above it. Lightly grease the griddle. For each pancake, pour 1/4 cup batter onto the griddle. Cook 3-5 minutes, until bubbles appear on the surface and the undersides are golden brown. Adjust the heat if the pancakes are browning too fast. Turn the pancakes over and cook 1-2 minutes longer to brown the second side. For waffles: heat the waffle iron; grease it lightly. Pour in the appropriate amount of batter and spread to the edges. Close and cook until the iron will open easily. Keep finished waffles or pancakes warm in a 200'F. oven - pancakes on a plate and loosely covered to keep moist; waffles directly on the oven rack, uncovered, to stay crisp. Makes 8 4" pancakes. Serves 4.

Homemade Waffles Recipe
Homemade waffles are the kind of comforting dish that everybody love and never get enough with. This is my favorite waffle recipe so far. The batter is easy to work with and the waffles come out light, crispy and fluffy.

Ingredients
Makes about 10 waffles
2 cups (250g) all-purpose flour
2 tsp (8g) baking powder
1/2 tsp (3g) salt
3 tbsp (45g) sugar
1 tsp (5g) vanilla extract
2 cups (480ml) milk
2 eggs, separated
3 tbsp (45g) butter - melted
1.In a large bowl whisk together the dry ingredients: flour, baking powder and salt.
2. Separate the eggs. Mix the egg yolks with sugar, butter, vanilla and 1 cup milk. Add flour mixture and mix until well combined. Gradually add the other cup of milk and whisk to combine.
3. Whip the egg whites and gently fold them into the yolks mixture.
4. Preheat your waffle iron and spray both surfaces with cooking spray or grease with oil. Pour about 1/3 cup batter onto one side of the iron and close it.
5. Bake until the iron's indicator light shows that cooking is done and the waffles are golden brown and crisp. It's best to serve them immediately with butter, maple syrup or honey and fruits.

Why Use Oil Instead of Butter?
Instead of butter, this recipe recommends using oil. The reason is because the waffles will be crispier than if you were to use butter. The best type of oil to use is a neutral-tasting oil like vegetable or canola.
How to Freeze Waffles
The best way to save waffles is by freezing them. To do this, simply let the waffles cool completely on a wire rack. Once they are cooled, place about two waffles in each sandwich baggie.
Seal the bags. Then, put all of your sealed baggies into one big freezer storage bag. When you want to eat a waffle, simply take one out of the freezer and place it in your toaster.
What is the Best Pancake Mix for Waffles?
The best pancake mix to use is one that’s plain. Avoid using flavored pancake mixes or ones that have fruit in them. I like to use pancake mixes that only call for the addition of water, like Krusteaz.
Ingredients
1 1/2 Cups Pancake Mix (Just Add Water Type)
2/3 Cup Water
3 Tablespoons Oil
1 Egg
1 Teaspoon Vanilla Extract (optional)
1 Tablespoon Malted Milk Powder (optional)
1/2 Teaspoon Cinnamon
Instructions
1. Add the pancake mix, water, oil, beaten egg, and optional ingredients to a mixing bowl.
2. Use a whisk to combine the ingredients to make waffle batter.
3. Heat a waffle iron and brush with oil to keep the waffles from sticking.
4. Add the batter to the hot waffle iron. (I used 1/4 cup of batter for my small Dash Waffle Iron)
5. When the waffle iron indicates it is done, remove the waffle and serve, or keep warm in the oven.
