How To make Biscotti Di Pratto
1/4 C Almonds
blanched
3/4 C Almonds :
whole unblanched
4 Eggs divided
1 Tsp Vanilla
1/4 Tsp Almond extract
2 1/4 C Flour
1 C Sugar :
white
1 Tsp Baking soda
1 Pinch Salt
Preheat oven to 350 degrees.
On a baking sheet, roast blanched and unblanched almonds until blanched almonds start to brown, shaking pan occasionally; 5 to 8 minutes. Remove blanched almonds, place in blender container and grind until it turns to powder. Set aside. Meanwhile, ret urn whole almonds to oven 2 to 3 minutes longer. Remove and chop whole almonds roughly with knife, leaving large chunks. Set aside. Turn oven down to 300 degrees. Grease baking sheet & dust with flour; set aside. In a small bowl, beat 3 eggs, vanilla & extract. In large bowl, mix together flour, sugar, baking soda, salt and ground almonds.
Make a well in the center and add the eggs, blending to gradually incor- porate all of flour mixture. You should have a stiff dough. If it is too stiff to hold together, add a little water. Add the crushed almonds and knead them evenly into the dough. Divide dough into 3 portions. Form each into a long log, rounded or slightly oval (about 1 1/2 inches in dia- meter). It will flatten as it bakes. Place on prepared baking sheet. Bake 45 - 50 minutes. Remove from oven and let rest 5 minutes. Turn oven down to 275 degrees. With a serrated knife, cut logs into 3/4" slices. (NOTE: Unlike slicing a loaf of bread, straight across its width, cut biscotti on a 45 degree angle.) Lay slices flat on 2 baking sheets. Return to oven for 20 - 25 minutes, turning slices 1/2 way through baking time. Remove from oven; allow to cool completely before sealing in containers. They will stay fresh up to 1 month.

CANTUCCINI DI PRATO
Serves: 3 dozen
INGREDIENTS
• 400 g flour
• 250 g sugar
• 150 g almonds, unpeeled
• 3 eggs
• 3 egg yolks
• 1 tsp baking powder
• pinch of salt
PREPARATION:
1. Preheat the oven to 180°C.
2. Mix 2 eggs, egg yolks and sugar in a bowl. Add the flour and the baking powder and the pinch of salt. Toast the almonds, when they are cold, add the mixture.
3. On a clean surface, turn out the dough and shape it into some roll: the should be 3 fingers wide and tall one finger.
4. Place rolls in oven, brush them with and bake for about 15 minutes, then remove rolls from the oven. The roll should be warm and firm; place it on a cutting board and cut diagonally, making 1 cm wide slices.
5. Place the slices back in oven and leave some space between each slice. Bake for 10 minutes to 150°C.. Remove and let cool.
These cookies are traditionally enjoyed together with a good glass of Vin Santo. It is common Tuscan tradition to dip the cookie into the Vin Santo.
PREPARAZIONE
1) Pre-riscaldare il forno a 180 gradi.
2) Tostare le mandorle.
3) Mischiare le due uova e i tuorli di uovo
4) Aggiungere farina e lievito, con un pizzico di sale.
5) Aggiungere mandorle alla mistura.
6) Su una superfice pulita , fare dei rotoli spessi 3 dita e alti 1 dito .
7) Cuocere i rotoli per 15 minuti.
8) I rotoli dovrebbero essere caldi e sodi, su un tagliere fare fettine diagonali di 1 cm.
9) Rimettere in forno i biscotti lasciando spazio fra ognuno. Cuocere per 10 minuti a 150 °c

Crunchy and delicious with a slight citrus scent and almond pieces. Cantucci are famous Italian biscuits, specifically from Tuscany.
This is my recipe:
270 g all-purpose flour (1 cup + 3/4 cup)
140 g sugar (3/4 cup)
2 eggs
140 g almonds (1 cup)
40 g butter (3 tbsps)
1 tsp baking powder
lemon zest
*For guaranteed results, it is strongly suggested to use grams as the unit of measurement.
