INGREDIENTS:
1 large yellow onion, diced small
4 cloves garlic, minced
2 teaspoons cumin seeds, toasted and ground
2 chiles in adobo sauce, minced, or 2 teaspoons ancho chile powder
Zest and juice of 2 oranges
2 (15-ounce) cans black beans, drained and rinsed (about 3 cups)
Sea salt
18 corn tortillas
1½ cups Spiked Sour Cream
1 jar salsa
DIRECTIONS:
-Sauté the onions in a saucepan over medium heat for 8 to 10 minutes. Add water 1 to 2 tablespoons at a time, to keep them from sticking. Add the garlic and cook for another minute. Add the cumin, chiles in adobo sauce, orange zest and juice, and black beans.
-Season with salt to taste, and purée the mixture in a food processor until smooth but still a little chunky.
-Place the tortillas, a few at a time, in a nonstick skillet over medium-low heat. Heat until softened, 3 to 4 minutes. Stack the warmed tortillas and wrap them in a piece of foil.
-Spread 3 tablespoons of the black bean mixture over half of each tortilla, then roll up the tortilla and set it aside. Repeat with the remaining tortillas, then place all of the taquitos into a large nonstick skillet and heat over medium-low heat for 3 to 4 minutes.
-Serve with the Spiked Sour Cream and salsa.

✅Ingredients
Salad:
• 30 ounces canned chickpeas, drained and rinsed
• 1 pint red grape or cherry tomatoes, halved or quartered
• 1 English cucumber, diced
• 1 green bell pepper, diced
• 1 small red onion, thinly sliced
• ½ cup sliced kalamata olives
• ½ cup crumbled feta cheese
• 2 tablespoons freshly chopped basil
• 2 tablespoons freshly chopped mint
Dressing:
• 2 tablespoons honey
• 3 tablespoons extra virgin olive oil
• 2 tablespoons lemon juice
• 2 tablespoons white wine vinegar
• ¼ teaspoon salt
• ¼ teaspoon black pepper
✅Instructions
1️⃣ In a large mixing bowl, toss together chickpeas, tomato, cucumber, bell pepper, red onion, olives, feta, basil, and mint.
2️⃣ For the dressing, pour honey into a microwave-safe mixing bowl. Microwave 10-15 seconds to liquify honey. Whisk in olive oil, lemon juice, vinegar, salt, and pepper.
3️⃣ Pour dressing over chickpea salad. Toss to combine. Refrigerate until ready to serve.

One of my favorite salad Pinto Bean salad with orange vinaigrette/ Vegan Pinto bean salad with orange dressing. This vegan salad is a delicious and can be eaten for main course.
The pinto bean is a variety of common bean , in Spanish they are called frijol pinto literally speckled bean . It is the most popular bean in Northern Mexico and the Southwestern United States, and is most often eaten whole or mashed and then refried. Either way, it is a common filling for burritos in Mexican cuisine, or as a side dish in New Mexican cuisine.
Pinto beans are often soaked, which greatly shortens cooking time. If un soaked, they are frequently boiled rapidly for 10 minutes. They will then generally take two to three hours to cook on a stove to soften. In a pressure cooker they will cook very rapidly, perhaps 3 minutes if soaked, and 20-45 minutes if un soaked. Cooking times vary considerably however and may depend on the source of the bean, hardness of the cooking water and many other factors.

Cilantro - 2 tbsp
Pickled jalapeno - 3
