1 lb Dried black beans
6 c Water
4 c Chicken or vegetable stock
1/4 c Olive oil
1 lg Onion
finely chopped
4 To 6 garlic cloves :
Minced 1 1/2 ts Cumin
1 1/2 ts Oregano
2 ts Salt
1 1/2 c Cooked brown rice
2 To 3 tbsp. red wine vinegar
2 c Sour cream
4 Green
6 Radishes thinly sliced

1 pound Black Beans, rinse and drain
Cover beans in fresh cold water and soak for 8-10 hours. Drain water.

8 cups fresh cold water
On high heat bring beans and water to a boil. Reduce heat to simmer. Cover bean and cook for 1 hour.
In large skillet on medium heat add...

2 bay leaves
!/2 cup sherry cooking wine
1 tablespoon apple cider vinegar

Remove from heat for 1 hour.
Remove bay leaves and puree some for the black beans for a hearty soup.
Return beans back to medium heat to warm. Serve.
Tips: Serve over cooked rice, puree to make Black Bean Dip.

It's one of the first Latin soups I learned how to make early in my career. Making this soup from scratch (with dried black beans) is optimal, but I'll be the first to admit, I don't always have the time for it.
