How To make Blackberry Cake
1 White cake mix with pudding
1 3 oz pkg black raspberry-fla
1 c Vegetable oil
1/2 c Milk
4 Eggs
1 c Fresh or frozen blackberries
1 c Flaked coconut
1 c Chopped pecans
icing:
1/2 c Butter or margarine; softene
1 lb Confectioners' sugar
4 Milk
1/2 c Fresh or frozen blackberries
1/2 c Flaked coconut
1/2 c Chopped pecans
In a mixing bowl, combine cake mix, gelatin, oil and milk; mix until blen Add eggs, one at a time, beating well after each addition. Fold in blackberries, coconut and pecans. Pour into three greased 9-inch round bak pans. Bake at 350 for 25 to 30 minutes or until cake tests done; cool in p 10 minutes before removing to wire racks.
Icing: Cream butter in a mixing bowl. Add sugar and milk; beat until des consistency is reached. Stir in blackberries, coconut and pecans. Frost to of two layers; stack on serving plate with plain layer on top. Frost top a sides of cake.

The Ultimate Blackberry Crumb Cake Recipe
Everyone has a recipe they make more than pretty much everything else combined. Well for me, this blackberry crumb cake is it. It’s the sweet that works as a breakfast or dessert, and anytime there’s guests coming over, kids having a sleepover, or hubby just thinks it’s been far too long, I make this cake. It’s got a couple of parts to it, but honestly, it doesn’t get much simpler than this. You don’t even need a mixer!

zest of two lemons
1½ cup (300 g) granulated sugar
½ cup (114 g) salted butter - room temperature
3 large eggs - room temperature
2 tsp (10 ml) pure vanilla extract
¼ cup (55 g) vegetable oil
2½ cup (263 g) cake flour
1/2 tsp (3 g) baking soda
1½ tsp (6 g) baking powder
1 cup (144 g) blackberries - washed and dried
1 cup (230 g) sour cream - room temperature
⅓ cup (81 g) fresh lemon juice
1 cup (226 g) lemon curd - homemade or store-bought (see note)
Blackberry Buttercream Frosting:
1 cup (144 g) blackberries
¼ cup (59 ml) fresh lemon juice
1 ½ cup (341 g) salted butter - room temperature
6 cup (700 g) powdered sugar
2 tsp (10 ml) pure vanilla extract

Easy Blackberry Muffins Recipe
Moist and delicious muffins with sour-sweet blackberries in every single bite!
Ingredients for 12 muffins:
113g butter
225ml milk
1 egg
268g plain flour
113g sugar
1 tbsp baking powder
300g fresh blackberries, coated in flour
This video was filmed in September last year when blackberries were ripe, you could try an experiment using raspberries, strawberries or blueberries instead (though I've never tried it before).
