How To make Blueberry Crumb Cake
Cake: 2 c Flour
2 ts Baking powder,double-acting
1/2 ts Salt
4 tb Butter
3/4 c Sugar
1 Egg; beaten
1/2 c Milk
2 c Blueberries,fresh
Crumb topping: 1/2 c Sugar
1/4 c Flour
1/2 ts Cinnamon,ground
4 tb Butter
flour, baking powder and salt. Set aside. Cream butter and gradually beat in sugar. Add egg and milk and beat until smooth. Add dry ingredients. Dust blueberries lightly with flour. Fold into batter. Spread into greased and floured 9 inch square baking pan. To prepare topping: mix together sugar, flour and cinnamon. Cut in butter and mix into coarse crumbs. Crumb Topping Recipe
- 1 stick (1/4 lb) unsalted butter
- 1/4 cup sugar
- 1/3 cup brown sugar (packed, of course)
- 1 tsp vanilla
- 1 1/3 cup flour
- 1 tsp cinnamon
- a few shavings of fresh nutmeg (or use a pinch from a jar) careful not to overpower with nutmeg
Cake Recipe
- 3/4 cup sugar
- 3/4 stick unsalted butter (6 T) (room temperature)
- 2 eggs (room temperature)
-1 tsp vanilla
- 2/3 cup sour cream
- lemon zest
- 1 1/4 cup flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh blueberries preferred. May use defrosted and drained frozen.
Bake in a preheated 350 degree oven for 40 to 50 minutes. Check with a knife rather than a toothpick for doneness.

Sugar 30g
Lemon juice 5g
Almond Crumble
Cake flour 50g (You can also use AP flour)
Almond flour 50g
Brown sugar 50g
Unsalted Butter 60g (It’s easy to work when your butter is slightly cold)
Cake sponge
1 Egg (50g) (Room temperature)
Milk 50g (Warm)
Vanilla extract 1 tsp
Canola oil 30g
All purpose flour 125g
Baking powder 3g
Sugar 80g
Unsalted butter 27g (Melted)
Bake at 340F for bout 20~25 min
(Time can be different depends on your oven and the cake size)
8 inch x 8 inch pan
Bake at 340F for about 20min

250g butter (牛油)
170g / 3/4 cup caster sugar (细砂糖)
4 large eggs - grade A(鸡蛋)
230g / 1 3/4 cups plain flour (普通面粉)
1/4 tsp salt (盐)
1 tsp baking powder (发粉)
50ml dairy whipping cream (动物性鲜奶油)
125g blueberries (蓝莓)
Crumble (奶酥):
50g butter (牛油)油
50g caster sugar (细砂糖)
50g plain flour (普通面粉)粉
50g ground almond (杏仁粉)
1/4 tsp salt (盐)
125g blueberries (蓝莓)
Bake at 160°C for 55-60 minutes

Bursting Blueberry Crumb Cake
CRUNCH CRUMB (STREUSEL):
2/3 cups flour, plain/all-purpose (100g)
½ cup caster sugar (superfine sugar) (100g)
1/2 tsp cinnamon
1/8 tsp cooking/kosher salt
60g /4 tbsp melted butter
1/4 tsp vanilla extract
LEMON VANILLA CAKE:
1 1/3 cups flour, plain/all-purpose (200g)
2 tsp baking powder
1/4 tsp salt
3/4 cup caster sugar (superfine sugar) (150g)
1 tsp vanilla extract
1 tbsp lemon zest
2 large eggs, room temp
90g/6 tbsp unsalted butter, melted cooled
1/3 cup sour cream, room temp (sub yogurt) (70g)
1/3 cup milk, room temp (80ml)
BLUEBERRIES:
500g / 1lb fresh blueberries*
2 tsp lemon juice, 2 tbsp white sugar, 3 tbsp flour
1. Streusel – Mix flour, sugar, cinnamon and salt. Add butter and vanilla, use fork to mix until lumpy.
2. Blueberries – Toss in lemon, then toss with sugar and flour. (If using frozen, keep frozen and do this after you make batter).
3. Cake – Whisk flour, baking powder, salt. In larger bowl, whisk sugar, vanilla, zest and eggs. Whisk in butter & sour cream. Using rubber spatula, fold in flour in 3 batches. Then mix in milk.
4. Assemble – Pour in 20cm/8” lined pan. Top with blueberries (including all residual flour that doesn’t stick to blueberries). Crumble over streusel. Bake 65 minutes at 200C/400F (180C fan) or until toothpick inserted into centre comes out clean. Cool 10 min in pan then 10 min on rack before slicing to serve warm with ice cream! Or serve at room temp (delicious, but not as fun).
* Frozen blueberries – Use frozen and toss with flour etc after baking batter (if it thaws, it bleeds). Expect to add 10 min+ to bake time.
