How To make Blueberry Stack Cake
1 Box Yellow Cake Mix
without pudding
4 Whole Eggs
1 Teaspoon Vanilla
1/2 Cup Margarine :
softened
2/3 Cup Milk
******Icing******* 8 Ounces Cream Cheese
8 oz Cool Whip
1 lb Confectioner's Sugar
1 can Blueberry Pie Filling
Combine cake ingredients and make 6 small layers. Bake at 350'. Cool. Beat cream cheese, sugar, and cool-whip together. To assemble cake; spread cream cheese mixture on first layer, then 3 or 4 T. blueberrys. Continue till all layers are used. Press each layer firmly as they are added. Refrigerate for 24 to 48 hours before cutting. ------------------------------------------------------------------------- NOTES : I make 3 layers and slice in half. (Bake time about 18 min.) Any flavor pie filling or crushed pineapple may be used.

2 cups all-purpose flour
1 cup sugar
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon freshly ground nutmeg
1 tablespoon cornstarch
1/3 cup melted butter
3 tablespoons milk
¼ teaspoon almond essence
1 teaspoon vanilla
1 tablespoon raw brown sugar
2 large eggs at room temperature
½ cup sour cream at room temperature
1 ½ cup fresh or frozen blueberries
Directions
Step 1. Crack 2 eggs in a large bowl and remove chalazas
Step 2: Use hand mixer and mix on high for 30 seconds
Step 3: Gradually add 1 cup sugar and continue beating ono high for five minutes until mixture becomes light and creamy.
Step 4: Add almond essence, vanilla and sour cream, butter and beat on low for 10 seconds
Step 4: Sift flour, baking soda and salt in a large bowl
Step 5: Add baking powder and nutmeg, stir to combine
Step 5: Wash and drain blueberries then mix in 1 tablespoon cornstarch
Step 6: Gradually add the dry ingredients to the wet ingredients
Step 7: Add three tablespoons milk, stir to incorporate
Step 8: Grease a 9 x 2 ½ springform pan and line with parchment paper
Step 9: Pour half the mixture in the cake pan and spread out
Step 10; Top with half blueberries
Step 11: Add remaining mixture and spread out
Step 12; Top with remaining blueberries then press berries down into mixture
Step 13: Sprinkle 1 tablespoon raw brown sugar on top
Step 14: Bake at 350°F for 50 minutes or until skewer comes out clean, cool for 15 minutes
Step 15: Remove from oven and release the sides of the pan and remove parchment paper

Ingredients
1 pound (#4) phyllo pastry
1/2 pound unsalted butter, melted
1 -2 cups blueberries
For the Custard:
2 cups heavy whipping cream
1 14oz (400g) sweetened condensed milk
2 eggs
2 teaspoons pure vanilla extract
zest of a lemon
Instructions
Preheat the oven to 350 °F, 180 °C.
Stack 2 phyllo sheets together and gather them to create an accordion shape. (See video) Place them into a 9 by 13-inch baking pan.
Drizzle and brush the melted butter over the phyllo and bake on the center rack of the preheated oven for 20 minutes.
Prepare the custard by combining all of the ingredients together. Whisk well until the egg is incorporated.
Pour the custard over the toasted phyllo and top with the blueberries.
Return the oan to the centr rack of the oven and bake for an additional 30 minutes or until golden.
Dust with confectioner's sugar and serve. Kali Orexi!
Notes
Substitutions: The berries can be substituted for strawberry slices, blackberries, or raspberries.
Leave the berries out altogether and add ground pistachios or sliced almonds.
