Candied fruit - 300g

Easy And Moist Holiday Fruit Cake!!
Everyone loves this cake that I prepared during Holidays. Super moist and easy to make kind of fruit cake but without alcohol which is child friendly.
Here's what you'll need:
2 cups of any candied fruits
1/3 cup apple juice (80ml)
1/2 cup butter (110g) room temp
3/4 cup dark brown sugar (150g)
2 large eggs
1 teaspoon vanilla extract (5ml)
2 tablespoons honey (30g)
2 tablespoons oil (30ml)
1 and 1/2 cup plain flour or all purpose flour(190g)
1 tsp baking powder (5g)
1/2 tsp nutmeg (2g)
1/2 tsp cinnamon powder(2g)
1 tsp salt (5g)
1 cup of any dried nuts
2 tsp of lemon zest
1/3 cup apple juice

How To Make an Old Fashioned Boiled Fruit Cake
The old fashioned fruit cake we make for the tea rooms definitely satisfies the craving for winter comfort food. The dried and glacé fruits are simmered with sherry, butter and sugar until they are plump and glistening, making a moist rich fruit cake. A slice with a cup of tea beside an open fire will cheer up the greyest day in February.

How to make a boiled fruit cake, it's easy and really tastes good
How to make a boiled fruit cake
Ingredients
350 g (12 oz) Dried mixed fruit
110 g butter (4 oz)
110 g (4 oz) Soft brown sugar
120 ml (4 oz) Milk or water
1 level tsp Mixed spice
1 Egg
220 g Self raising flour
Add the fruit, and liquid to a large pan, put on a very low light to melt, then simmer for ten minutes.
Leave to cool for an hour - so when you add your egg, it doesn't cook.
When cool beat in the egg and then the flour.
Spoon into a lined baking ton, 23 cm or 10 inch.
Make a slight dip in the centre so the cake rises evenly.
Bake at 160 C 320 F Gas 3 for 1 hour.
After an hour, remove, test with a skewer - if clean, it's cooked.
Leave in the tin to cool before removing.
Rich Fruit Cake All Cooked In One Pan | Boiled Fruit Cake
I discovered this recipe in 2001, just over 20 years ago and then, thought it impossible to make a beautiful rich fruit cake in one saucepan. Many cakes on since then I can share this with you. You can use the same cream cheese icing that goes on the carrot cake, so I have included that in the ingredients list. I wish you all happy baking for lockdown.

2 cups of fruit cake mix (choose your own favourite blend)
1 cup of water
1 cup of sugar
250 grams butter
1 tsp mixed spice
1 tsp ground ginger
1 tsp of baking soda
2 cups self-raising flour
2 eggs well beaten (like an Aussie rugby team)
Cream cheese icing for top of cake
3 tbsp soft butter
1 1/2 cups of icing sugar
3/4 cup light cream cheese
Walnuts halved to garnish

Easy fruit cake| Boiled fruit cake recipe
Ingredients:
Batter:
All purpose flour ( Maida) - 2 cups ( 260 g)
Unsalted Butter- 185 g
Brown sugar -1 cup tightly packed (210g)
Eggs-3 ( medium) At room temperature
Baking powder-1 teaspoon
Baking soda-1/4 teaspoon
Salt-1/4 teaspoon
Zest of 1 orange
Zest of 1 Lemon
Vanilla essence-1 teaspoon ( optional)
Water-1/2 cup
Orange juice-1/2 cup + extra 1/4 cup for brushing
Dry fruits & Nuts:
Raisins-200 g ( 1 cup)
dried cranberries - 100 g
Tutti fruiti-100 g
Walnuts ( chopped) - 50 g
Almonds ( chopped) - 50 g
glazed cherries-100g
crystallized ginger-1 teaspoon ( optional)
You can use the nuts and fruits as per your choice and availability.
Spices:
Cinnamon stick-2 or 3 sticks
Cloves-6-7
Cardamom-6-7
Nutmeg-1/2 of a small one
Sugar-1 tablespoon
You can adjust the quantities as per your taste
Baking Pan:
8 or 9 inch pan . Grease with butter and line with parchment paper. Since this cake needs a long time baking , lining the sides with baking paper is highly recommended. I used 2 sheets for the bottom for preventing the over browning.
Baking Time:
Preheat the oven at 160C for 10 minutes. Bake at 160C for 45 minutes. After that reduce the heat to 150C and bake for 35-40 minutes more. Oven temperature may vary, so check your cake after 60 minutes of baking.
Cake weight: 1&1/2 Kg
