There’s nothing boring about this red cabbage recipe, it's packed with flavour! Naturally sweetened with apples and slowly cooked with fennel seeds, smoky bacon, rosemary and balsamic vinegar. This dish is the perfect accompaniment to roast meats. Add a dash of clementine juice for extra festive flavour.

How to make Cabbage patties
Cabbage patties recipe - crispy in the outside, soft inside. These fried cabbage balls/patties/cutlets are easy to make and super delicious.

Ingredients:
750g (26.45oz) cabbage
2 onions
2 eggs
1/3 cup (56g) semolina
2 garlic cloves
1/4 bunch parsley
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon black pepper
Oil for frying
Directions:
1. Chop the cabbage, cook in boiling water for 7-8 minutes, then drain completely.
2. Chop the onions, crush the garlic cloves. Cook the onions for few minutes and add crushed garlic. Cook over medium-low heat until onions become golden.
3. In a large bowl place cooked and drained cabbage, cooked onions, parsley, eggs, semolina, thyme, salt and pepper. mix all the ingredients well until incorporated. If needed add more semolina. Set aside for 10 minutes.
4. In a large pan heat vegetable oil.
5. Shape patties from cabbage mixture and fry over medium-high heat for 2-3 minutes from each side or until golden. Transfer to a kitchen paper to get rid of excess oil.
*serving suggestion: sour cream with dill, yogurt, fresh salad.

Caramelized Cabbage
Like Russian braised cabbage, but a shade darker and more intense.
1 medium green cabbage (about 7” or 18cm diameter)
1/4 cup olive oil
2 Tbsp butter or more oil as needed
1/4 cup dry white wine, stock, or water
2 tsp pomegranate molasses (or 1 tsp balsamic vinegar)
Salt
Cut the cabbage into thin strips 2” (5cm) by 1/4” (1/2 cm).
Set a 12” stainless steel skillet with straight sides (or something similar) over high heat. Add the oil. When the oil is hot, add the cabbage, salt, and stir. Cook covered stirring occasionally until you develop a lot of browning. Once you are halfway there, start dropping the heat and checking the cabbage more frequently. This will take about 25 minutes. If the skillet is ever dry, add the butter or more oil.
Reduce the heat to low, add the wine, scrape up the brown bits and cook uncovered stirring occasionally until the cabbage starts to brown again, about 10 minutes. Take off heat, stir in pomegranate molasses, taste and adjust for salt. Can be made ahead and rewarmed. Will last in the fridge for 5 days.

A family secret kitchen of my husband is to add a little sugar to cook the vegetables and cook the boiled cabbage is no exception. With a head of cabbage into strips, heat a large skillet over medium heat and add 1 tbsp. vegetable oil. When the oil is hot, add the boiled cabbage , two tablespoons of sugar and a teaspoon of salt and pepper. Stir frequently and add about 1 cup of water. Let the steamed boiled cabbage and cook until cabbage begins to soften, about 10 minutes. Season to taste and remove from heat when the edges begin to caramelize boiled cabbage. As a finishing touch, add 1 tablespoon cider vinegar coffee and mix well. I promise you, this is a delicious way to prepare cabbage. Boil, baby! Some of my children prefer cooked vegetables, so here is a similar preparation that can meet the tastes of his son. Bring a large saucepan of water to boil over high heat and add 1 head of boiled cabbage finely. a teaspoon of salt and pepper, vinegar. Adjust the heat as needed to get rolling, but not overflowing the boiled cabbage .
