How To make Broccoli Spinach Spread
1/4 c Extra-virgin olive oil
1 ts Whole cumin seeds
1/2 ts Crushed red pepper flakes
2 tb Fresh lime juice
1/2 ts Salt
1/4 ts Black pepper
1 lb Broccoli, cut into 1/4"
-- pieces, include stem 1/4 lb Fresh spinach
1/2 c Water
2 tb Grated coconut
Heat oil in non-stick frying pan over medium-low heat. Add cumin & pepper flakes & fry for 1/2 minute. Stir in lime juice, salt, pepper, vegetables & water. Cover & simmer until the vegetables are reduced to a chunky puree (45 to 60 minutes). Stir occasionally. Immediately before serving, spread about 1 tb of mixture on poppy seeds crackers, (see recipe). Sprinkle with coconut.

My creamy broccoli ricotta pasta will be your new favorite dish. The sauce is not only delicious, it’s nutritious made with hidden veggies which you’ll never know are in here. This sauce is the perfect way to sneak in veggies if you have picky eaters.
To make this a kid-friendly pasta dish you can also call it “green monster” pasta and have fun with it by using kid-friendly pasta shapes as well. The ricotta in this dish makes the sauce super creamy and light but feel free to use cottage cheese if you’re looking to boost up the protein.
Broccoli, spinach, onions and garlic are all a nutritional powerhouse full of vitamins, minerals, fiber and antioxidants so don’t be afraid to load up on the sauce! If you like this recipe, please let me know below and feel free to make it your own.

4 cups broccoli, cut into florets
1 sliced yellow onion
4 cloves of garlic
drizzle of olive oil
salt, to taste
400 grams pasta of choice (100 grams per person)
½ cup ricotta
½ cup grated Parmigiano Reggiano
1 cup baby spinach, or a handful
1 cup of pasta water (or filtered water)

This Broccoli and Cheese Dip is about as good as they come. I've also added Marinated Artichoke Hearts to give it a little twist, but it compliments the flavor whole heartedly. This recipe is very easy to make and it can be served hot as a dip or cold as a spread. Either way I think you'll really enjoy this version.
