How To make Brown Honey Scones
3 c Wholemeal
4 1/2 t Baking powder
1/2 t Salt
1 T Butter
2 T Honey
1 c Milk, approx
Mix wholemeal, salt and bakingpowder. Rub in the butter. Dissolve the honey in the milk, add to dry ingredients and mix to a soft dough. Rollout, cut out, and bake on a cookie sheet for 10 - 12 minutes at 425 degrees. (recipe from Edmonds Sure To Rise NZ Cookbook)

*cup measurements are just here for reference but I highly recommend measuring based on weight for more accurate results
Makes: 15 scones (about 2 inches in diameter)
⇒ Dough
2 cups (260 g) all-purpose flour
1/4 cup (30 g) corn starch
2 tsp (6 g) baking powder
2 tsp (6 g) pumpkin spice (or whatever blend of spices you like)
1/4 tsp salt
1/3 cup (65 g) brown sugar, lightly packed
1/2 cup (115 g) cold browned butter, cubed
1/2 cup (150 g) cold pumpkin puree
1/4 cup (60g) whole milk
1 large egg
1 tsp (5 g) vanilla extra
⇒ Glaze
1/3 cup (42g) icing sugar
2 tbsp (40g) maple syrup
1/4 tsp pumpkin spice
⇒ Egg wash
1 egg
1 tbsp (15 g) milk

Top tip - make an extra big batch and freeze the cut out dough. Then whenever you’re feeling peckish pop in the oven and cook until golden and warm.
