Pecan Waffles with Dried Fruit Compote | Emeril Lagasse
These pecan waffles are irresistible! Treat your family or friends by whipping up a batch of these simple yet delicious waffles for breakfast or brunch. The dried fruit compote and a drizzle of maple syrup are the perfect accompaniment. This waffle recipe is sure to become your go-to waffle recipe!
PECAN WAFFLES WITH DRIED FRUIT COMPOTE
SERVES 4 TO 6
1 1/2 cups all-purpose flour
1/3 cup ground pecans, plus more for garnish
1/3 granulated sugar
1 tablespoons baking powder
1/4 teaspoons salt
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups whole milk
2 tablespoons unsalted butter, melted, plus more for waffle iron
Dried Fruit Compote, chilled (recipe follows)
Pure maple syrup, for serving (optional)
In a mixing bowl combine flour, ground pecans, sugar, baking powder and salt. In another bowl beat the eggs and vanilla slightly. Whisk the milk and butter into the egg mixture. Whisk the flour mixture into the egg mixture. Stir until combined yet still slightly lumpy. Pour 3/4 cup batter onto grids of a preheated, lightly greased waffle iron. Close lid quickly: do not open during baking. Bake according to the manufacturer's directions for the waffle iron, until golden brown and lightly crisp, about 5 to 5 1/2 minutes.
Serve hot waffles with fruit compote and maple syrup, if desired. Garnish with extra ground pecans.
DRIED FRUIT COMPOTE
MAKES ABOUT 6 CUPS
2 pounds mixed dried fruit, such as figs, apricots, cherries, cranberries, apples, prunes, or blueberries
2 cups boiling water
1/2 cup fresh orange juice
1/4 cup cognac
3/4 cup water
1/4 cup sugar
2 cinnamon sticks
1/8 teaspoon ground cloves
1 vanilla bean, split
Place the dried fruits in a large bowl and cover with 2 cups of boiling water. Let the fruit sit for about 1 hour, then drain. Place the fruit in a medium saucepan with the remaining ingredients, making sure the vanilla bean pod is scraped and the pod and seeds are added to the mixture. Bring to a boil, then reduce the heat and allow mixture to simmer gently for 50 minutes to 1 hour. The fruit should be tender but not falling apart. Add more sugar or orange juice, to taste, if needed. Remove and discard the cinnamon stick and vanilla bean pod.
Refrigerate compote in its syrup overnight before serving. Serve compote chilled.

Hey y’all! So In today’s video I show you how I made this delicious Buttermilk Sweet Potato Waffle with Butter Pecan syrup. I converted the recipe linked below into half of the measurements so I only made 3 waffles, you can get about 6 large waffles with the link below. I freestyled the butter pecan syrup drizzle and it took these waffles to a whole new level! 10/10 would recommend as essential!
Waffle:
Butter Pecan topping:
3 tbsp of salted butter
3 tbsp of brown sugar
3/4 cup chopped pecans
1/2 syrup of choice

How to make Peach Cobbler Pecan Buttermilk Waffle....Brunch style
Welcome to Everything's MAJOR *Waffle Series*
My favorite go to for weekend brunch is my Major Peach Cobbler and pecan buttermilk waffle.
Peach Cobbler syrup
10oz of frozen peaches
1/2 cup to one cup of sugar
Tablespoon of freshly squeezed lemon ????
1/2 cinnamon
1/4 teaspoon of nutmeg
1/4 all spice
Table spoon of brown sugar
Cook over low to medium heat to a slight boil
Then simmer over low heat until your syrup starts to thicken.
Buttermilk pecan waffle:
1/4 teaspoon of Salt
2 cups of Flour
1 tablespoon of Sugar
4 teaspoons of baking powder
Mix well
Now for our wet ingredients you’ll need
1/2 teaspoon of Vanilla
Two eggs
One cup of Milk blended with 3/4 cups of buttermilk
1/2 of vegetable Oil
1/2 teaspoon Cinnamon
Mix well
Combine your wet ingredients with your dry ingredients and mix until your batter is smooth and lump free
Then add in your pecans ????
Mix well until all incorporated
Pour 3/4 to 1 cup of batter in your waffle iron
Peach cobbler Syrup should be nice and thickened by now
Garnish with some fresh fruit, powder sugar, whipped cream, cinnamon, and enjoy.
