How To make Cajun 3 Pepper Bread
8 Flour, bread
3/4 Polenta; uncooked
1/2 pt Pepper; cayenne
1 pt Pepper; black ground
1 pt Parsley flakes [dry]
3 pt Garlic; crushed
2 pk Yeast
4 pt Salt, preferably sea
1/2 Pepper; diced sweet red
4 pt Tabasco or hot pepper sau
2 1/2 Water
Proof yeast in 4 T of the water. Mix all the dry ingredients in a bowl, then add the liquids. Turn the dough onto a floured surface and knead it for 10-12 minutes.The dough should have a coarse look, but will be cohesive, stretchy, tacky but not sticky, and resilient. Allow the dough to rise for about 1-1/2 hours (until double in size). >>>>NEXT>>>> Punch it down, and allow it to rise again for 1-1 1/2 hours. Punch it down again. Cut the dough into two (2) pieces and form into rounds or french loaves. Allow to proof for 1 hour, then bake like french breads in a 400 deg oven with steam or spray for 30-40 minutes. Cool before cutting.

Recipe yields 2 servings. Each serving has 445 Cal, if you add rice (2/3cup): about 600 Cal/serving.
Ingredients:
???? 2 bell peppers of your choice (I chose 1 green, 1/2 red, 1/2 yellow)
???? 1 tbsp olive oil
???? 500g steak, thinly sliced
???? 2 cloves of garlic, minced
???? 1/4 tsp ginger powder ???? 1/4 cup soy sauce (low salt)
???? 1/4 cup of water
???? 3 tbsp flour
???? 1.5 tbsp brown sugar
???? Salt & pepper to taste
Instructions:
1. Cut bell peppers and steak into thin slices and set aside
2. Heat 1/2 tbsp of olive oil over medium heat in a pan
3. Add bell peppers to the pan, cook until tender (about 3 min), then set aside
4. Add 1/2 tbsp of the remaining olive oil to the pan, add steak and season with salt and pepper
5. Cook steak until well done
6. In a small bowl, mix the soy sauce, water, brown sugar and flour until well combined
7. When the steak is well done, add garlic and ginger to the pan, then mix
8. Place the bell peppers back in the pan with the steak
9. Pour sauce over the steak mixture, cook until sauce thickens (about 3min), then serve with rice.

Cajun Chicken With Bell Pepper
4-5 chicken breasts
Seasoning mix:
1 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp oregano
1/4 tsp thyme
1/4 tsp salt
2-3 bell peppers thinly sliced
4-5 gloves of minced garlic
6-8 oz cream cheese (sliced thin)
1/2 cup cheddar cheese shredded
Put oven on 350. Put thinly sliced peppers on bottom of 9x13 baking dish. Place chicken breast over peppers and sprinkle seasoning mix all throughout the dish. Top chicken with minced garlic.
Add 2-3 slides cream cheese pieces on chicken and top with cheddar cheese. Bake uncovered 20-25 mins. Broil at the end if you’d like watching very closely not to burn.
Carefully move the peppers around the sides of the chicken or even on top and serve warm.

INGREDIENTS:
-8 baby Italian eggplants, sliced lengthwise 1-inch thick
●Canola oil
●4 grilled or roasted red peppers, skin and seeds removed and chopped
●3 tablespoons pine nuts
●3 cloves garlic
●2 teaspoons fresh thyme leaves
●1/2 cup olive oil
●3/4 cup grated Parmesan
●1 pound fresh mozzarella, thinly sliced, weighted for a for a few hours to remove excess liquid
●2 tablespoons fresh oregano leaves
●1/2 cup extra-virgin olive oil
●1/4 cup canola oil
●2 cloves garlic, smashed to a paste
●1 teaspoon Spanish paprika
●Pinch cayenne
●6 slices day old Italian bread, crusts removed, coarsely ground in food processor 3 tablespoons finely chopped fresh flat-leaf parsley
●2 teaspoons chopped fresh thyme
●Kosher salt and freshly ground black pepper
●1/4 cup olive oil
●1/2 cup spice rub from Cajun-rubbed spiced turkey
Cajun BBQ Jalapeño Slammers - Southern Football Fare!
New Orleans, Louisiana has fabulous music and wonderful food - which includes BBQ! Today we are making some of that BBQ, it's my Cajun Chicken Jalapeño Slammer. The chicken is seasoned, cooked and shredded and mixed with a yummy Jalapeño BB Sauce. Let me show you how easy it is to prepare and serve at your Super Bowl party!
Total Time: 1 hr. Serves: 6-8 Slammers
Ingredients
• 4 boneless skinless chicken breasts
• 1-2 tablespoons Cajun Seasoning (recipe for homemade is below or use your favorite)
• ¼ cup brown sugar
• 1 tablespoon olive oil
• 1 teaspoon salt
• 6-8 of your favorite sandwich rolls
Pound the chicken breasts so that they are 1” thick.
Line a baking pan with aluminum foil. Drizzle chicken with olive oil, sprinkle with brown sugar and Creole seasoning and rub it in.
Bake chicken in 450 degree preheated oven for 20 minutes. No need to turn.
Broil on high for additional 2-3 minutes of cooking.
Remove chicken from pan to cutting board and let it cool.
Shred cooled chicken and mix in bowl with your favorite Cajun BBQ sauce until chicken is coated (recipe for homemade is below). Serve hot in a roll with cheese on top and dill pickle chips. Add extra sauce to taste.
CAJUN SEASONING
2 tbsp smoked paprika
1 tbsp onion powder
1 tbsp pepper
1 tbsp garlic powder
1 tbsp cayenne powder
1 tbsp oregano
¼ tsp red pepper flakes
Mix and store in airtight container.
CAJUN BBQ SAUCE
1 cup ketchup
2/3 cup brown sugar
2/3 cup prepared mustard
¼ cup Worcestershire sauce
1/3 cup apple cider vinegar
1 jalapeno, cleaned and finely chopped
1 tbsp Cajun Seasoning
Whisk all ingredients together in a saucepan over medium heat and bring to a simmer.
Add the Jalapeno and Cajun seasoning.
Return the sauce to a simmer. Reduce the heat to maintain a low simmer for about 15 to 20 minutes.
