Sauce
3 red bell peppers, roasted and peeled
1 can 14oz (211g) whole tomatoes in can
4 garlic gloves
1 cup basil (handful)
1 1/2 tablespoons The Fit Cook Southern Creole Cajun blend (or low sodium cajun seasoning)
2 tablespoons almond butter
Pasta
4 large zucchini, julienned or spiralized
3 jumbo carrots, julienned or spiralized
Shrimp (optional)
1 1/4 lb jumbo shrimp, peeled and deveined (OR 3 cups sliced portobello mushrooms)
1 cup sliced portobello mushrooms (OPTIONAL)
1 tablespoon The Fit Cook Southern Creole Cajun blend (or low sodium cajun seasoning)

Healthy Low-Calorie Bell Pepper Steak
????Low-Calorie Meal Recipe???? Bell Pepper Steak ????
Recipe yields 2 servings. Each serving has 445 Cal, if you add rice (2/3cup): about 600 Cal/serving.
Ingredients:
???? 2 bell peppers of your choice (I chose 1 green, 1/2 red, 1/2 yellow)
???? 1 tbsp olive oil
???? 500g steak, thinly sliced
???? 2 cloves of garlic, minced
???? 1/4 tsp ginger powder ???? 1/4 cup soy sauce (low salt)
???? 1/4 cup of water
???? 3 tbsp flour
???? 1.5 tbsp brown sugar
???? Salt & pepper to taste
Instructions:
1. Cut bell peppers and steak into thin slices and set aside
2. Heat 1/2 tbsp of olive oil over medium heat in a pan
3. Add bell peppers to the pan, cook until tender (about 3 min), then set aside
4. Add 1/2 tbsp of the remaining olive oil to the pan, add steak and season with salt and pepper
5. Cook steak until well done
6. In a small bowl, mix the soy sauce, water, brown sugar and flour until well combined
7. When the steak is well done, add garlic and ginger to the pan, then mix
8. Place the bell peppers back in the pan with the steak
9. Pour sauce over the steak mixture, cook until sauce thickens (about 3min), then serve with rice.

Cajun BBQ Jalapeño Slammers - Southern Football Fare!
New Orleans, Louisiana has fabulous music and wonderful food - which includes BBQ! Today we are making some of that BBQ, it's my Cajun Chicken Jalapeño Slammer. The chicken is seasoned, cooked and shredded and mixed with a yummy Jalapeño BB Sauce. Let me show you how easy it is to prepare and serve at your Super Bowl party!
Total Time: 1 hr. Serves: 6-8 Slammers
Ingredients
• 4 boneless skinless chicken breasts
• 1-2 tablespoons Cajun Seasoning (recipe for homemade is below or use your favorite)
• ¼ cup brown sugar
• 1 tablespoon olive oil
• 1 teaspoon salt
• 6-8 of your favorite sandwich rolls
Pound the chicken breasts so that they are 1” thick.
Line a baking pan with aluminum foil. Drizzle chicken with olive oil, sprinkle with brown sugar and Creole seasoning and rub it in.
Bake chicken in 450 degree preheated oven for 20 minutes. No need to turn.
Broil on high for additional 2-3 minutes of cooking.
Remove chicken from pan to cutting board and let it cool.
Shred cooled chicken and mix in bowl with your favorite Cajun BBQ sauce until chicken is coated (recipe for homemade is below). Serve hot in a roll with cheese on top and dill pickle chips. Add extra sauce to taste.
CAJUN SEASONING
2 tbsp smoked paprika
1 tbsp onion powder
1 tbsp pepper
1 tbsp garlic powder
1 tbsp cayenne powder
1 tbsp oregano
¼ tsp red pepper flakes
Mix and store in airtight container.
CAJUN BBQ SAUCE
1 cup ketchup
2/3 cup brown sugar
2/3 cup prepared mustard
¼ cup Worcestershire sauce
1/3 cup apple cider vinegar
1 jalapeno, cleaned and finely chopped
1 tbsp Cajun Seasoning
Whisk all ingredients together in a saucepan over medium heat and bring to a simmer.
Add the Jalapeno and Cajun seasoning.
Return the sauce to a simmer. Reduce the heat to maintain a low simmer for about 15 to 20 minutes.
