How To make Cape Breton Oatmeal Shortbread
1 1/2 c all-purpose flour
1 tsp baking powder
1 1/4 c margarine
1 c brown sugar
1/2 tsp vanilla
1 1/2 c rolled oats
Cream margarine. Gradually add brown sugar and vanilla. Add rolled oats, flour and baking powder. Combine well. Turn dough onto lightly floured surface. Knead lightly. Pat or roll dough in a rectangular shape, not too thin. Cut into slices. Bake in 350 oven, 20-25 minutes. Cool on wire racks.

Hello folks!
Today I whipped up a batch of these wonderful Cheddar cheese oatcakes! So simple and very easy to make and pair wonderfully with a bowl of tomato soup :) The oatmeal I used is suitable for a gluten free diet - please check your brand to make sure yours is....if that's important to your diet.
Everything I used will be listed below,

What I used - Makes 20 oatcakes using a 7cm cutter
* 250 g (8.8 oz) Oatmeal
* 25 g (0.8 oz) Butter - melted
* 1/2 Teaspoon salt - add more or less according to how salty you like them.
* 120 g (4.2 oz) Mature cheddar cheese grated
* 100 ml (3.5 oz) Hot water
Combine everything in a bowl, mix with a wooden spoon . Leave to rest for 10 minutes. Scatter some oatmeal (or flour) on your work surface and roll out however thick you’d like! Use a 6cm cookie cutter to cut out the oatcakes and bake on a lined non-stick oven tray for around 20-25 minutes at gas mark 4/5 (180c) Enjoy! :)

Scottish Oatcakes
This is a quick and simple recipe for Scottish oatcakes using basic pantry ingredients.
Ingredients
115g // 1 1/3 cup oats
/oatmeal
4 tbsp vegan butter
4 tbsp hot water
1/4 tsp salt
Pinch of black pepper
1/4 tsp bicarb
1-2 tbsp flour

Scottish Fatty Cutties Traditional Scottish Recipe
The traditional Scottish Fatty Cutties coem from Orkney and I first tried them from a company up there. My kids loved them and I knew I would have to find a recipe for them. This recipe is based on a traditional recipe from Orkney and has been kept as close to the original as possible.

Scottish Fatty Cutties - awaiting blog link
They are very similiar to a shortbread and have the addition of little currants which I think makes them the perfect biscuit to have with a cup of tea. Traditionally they were cooked and flipped on the girdle but I have baked my ones in the oven. I like them this way but you can try cooking them in a cast iron pan if you like.
