How to Make Chocolate Turtles
Making homemade chocolate turtles is so easy you'll wonder why you haven't done it before now! Skip the chocolate shop! Add these to cookie tins with your favorite fudge and plenty of holiday cookies.

Ingredients
8 ounces pecans toasted
12 ounces caramels
1 tablespoon water
12 ounces semisweet chocolate
Instructions
First, toast the pecans. Toss pecans lightly in oil. You can lightly salt them too if you like!
Oven method:
Preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment paper or silicone baking mat.
Place pecans on prepared baking sheet. Toast in the oven until fragrant, about 7 to 10 minutes. Pecans will be lightly browned.
Stovetop method:
In a dry skillet over medium heat, toast the pecans until fragrant, tossing or stirring occasionally, about 2 to 5 minutes. Pecans will be lightly browned.
Making the chocolate turtles
On a lined baking sheet create 18 small mounds of pecans, about 4-5 pecans in each mound.
Combine the unwrapped caramels and the water in a microwave safe bowl. Microwave in 30 second intervals until melted. Stir until smooth.
Spoon 2 teaspoons of melted caramel over each mound of pecans. Allow to set for 2-3 minutes before topping with melted chocolate.
Place chocolate in a bowl and melt in the microwave in 30 second intervals. I prefer to melt at 70% power so as not to scotch the chocolate. When melted or almost melted, stir until smooth.
Spoon 2 teaspoons of melted chocolate over each caramel cluster. Allow chocolate to set completely.
Notes
Instead of semi-sweet, you can use your favorite chocolate. Dark, milk, or even white chocolate will work. You can also use Candi-Quik or almond bark or those colorful candy melts.
If your chocolate gets a little thick, you can loosen it with a drop or two of coconut oil or vegetable oil.
While homemade caramel would be a fun thing to do, it will add a lot of time to this recipe. So we are using wrapped caramels instead.
Toasting pecans brings out their flavor. You can toast pecans in the oven or on the stovetop. I've provided instructions for both in the printable instructions below.
How to Store Chocolate Turtles
Turtles can be stored at room temperature and in the freezer.
Store your turtles at room temperature in an airtight container. They can be stored this way for up to 2-3 weeks. If your house tends to be a little more on the warm side, store them in the refrigerator, just bring to room temperature before serving.
You can also freeze your homemade turtles. Layer between sheets of parchment or waxed paper and store in airtight containers. Chocolate turtles can be frozen for up to 3 months.

Caramel Pecan Clusters
1 pound, 230 grams or 500ml, pecan halves, toasted
12 ounces, 340g, semi sweet chocolate, chips or baking bars
2 tablespoons, 24g, shortening
Toast pecan halves in a single layer in a 350°F, 180°C, oven until they begin to brown and are fragrant, about 8 minutes. Or roast the pecans in a dry skillet on top of the stove turning often until they begin to brown. Do not let the pecans burn. Roughly chop the pecans. Arrange the nuts in small clusters on a parchment lined baking sheet.
Chewy Caramel
16 ounces, 450g, by weight, light brown sugar
2 cups, 473ml, light cream or half and half
1 cup, 237ml, light corn syrup
1 cup, 223g, lightly salted butter
1 teaspoon, 5ml, vanilla
Melt the butter in a 4 quart sauce pan over medium heat. Add the sugar, syrup, and half and half to the pan and bring the mixture to a gentle boil. Clip a candy thermometer to the side of the pan. Stirring frequently, bring the mixture to 242°F, 117°C. This will take close to an hour. Do not leave the caramel to boil unattended since the temperature can quickly rise, especially in the last few degrees. Once the caramel reaches temperature, remove the thermometer from the candy and the pan from the heat. Stir in the vanilla. Allow the caramel to cool in the pan until it can hold a mounded shape, about 15 minutes. Working quickly, scoop a tablespoon of caramel onto mound of pecans. Spraying the spoon with cooking spray helps prevent sticking. Excess caramel can be poured into a pan coated with cooking spray.
Allow the caramel to cool completely, about an hour. Melt the chocolate and shortening in the top of a double boiler. Spoon and smooth about a teaspoon of melted chocolate onto each pecan cluster.
Serve at room temperature.

Y'all are gonna love how easy these homemade turtles are to make. Mom shows us how to use my great grandma Blanche's caramel recipe. Many people know them as Gophers, but I grew up knowing them as Turtles. Mom made them every Christmas. Sometimes she used peanuts in her Turtles, but most usually they were pecans. We’re giving one of our most popular videos an update and some delicious modifications. These candies are perfect for the holidays and especially for Valentine’s Day. We make them in a pan and cut them into squares rather than forming them as individual candies. And we sprinkle them with coarse salt for an added flavor dimension. Nothing says, “I love you,” like these amazing homemade candies.
Salted Caramel Pecan Squares
3½ cups, 450g, pecans, toasted
1 cup, 226g, salted butter
1 pound, 452g, light brown sugar
2 cups, 473ml, light cream or half and half
1 cup, 226g, light corn syrup
1 tablespoon, 15ml, vanilla extract
12 ounces, 339g, milk chocolate chips

Toast pecan halves in a single layer in a 350°F, 180°C, oven until they begin to brown and are fragrant, about 8 minutes. Or roast the pecans in a dry skillet on top of the stove turning often until they begin to brown. Do not let the pecans burn. Arrange the nuts in a single layer completely covering the bottom of an 11 by 15 inch (28x38cm) jellyroll pan covered with nonstick aluminum foil.
Melt the butter in a 4 quart sauce pan over medium heat. Add the sugar, syrup, and half and half to the pan and bring the mixture to a gentle boil. Clip a candy thermometer to the side of the pan. Bring the mixture to 240°F, 115°C, stirring two or three times. This will take close to an hour. Do not leave the caramel to boil unattended since the temperature can quickly rise, especially in the last few degrees.
Once the caramel reaches temperature, remove the thermometer from the candy and the pan from the heat. Stir in the vanilla. Pour the mixture evenly over the pecans in the pan, smoothing carefully to cover everything. Let the caramel sit for 5 minutes and then spread the milk chocolate chips over the top in a single layer. Let the chocolate sit for 8-10 minutes or until they are shiny. Once the chocolate has melted, spread it in a even layer over top of the caramel. Immediately top with a light sprinkle of coarse salt.
Let the caramel cool to room temperature and then refrigerate, uncovered, for a few hours or overnight. Bring the caramels back to room temperature to cut into one inch squares. Store at room temperature in an airtight container with parchment paper between the layers.
