How To make Caribbean Red Snapper
5 Lb. snapper
salt and pepper to taste 1/2 lime
1/4 C. flour
1 C. rice
1 C. chopped raw shrimp
1/2 C. chopped green onions -- including tops
1/2 C. very thinly sliced celery
1 Tbsp. grated ginger root
2 bacon slices
1/4 C. dry white wine
Season red snapper with salt and pepper, inside and out. Rub with the lime. Sprinkle evenly with the flour. Combine rice, shrimp, onion, celery and ginger root. Spoon into fish. Skewer or sew opening. Lay fish in a heavily buttered baking pan. Score the top of the fish in an attractive design to prevent the fish from buckling. Lay bacon slices over the top. Bake at 350 degrees for 45 minutes or until fish flakes. Transfer fish to a warm platter. Deglaze baking pan with white dry wine. Pour liquid over fish.

1 large carrot (julienne)
Scotch bonnet peppers
Bell peppers
1 onion
Pimento peppers (for flavor) if available
Pimento seeds (8-10)
2 gloves garlic
Fresh thyme
1/2 cup white vinegar
1 tbsp sugar
Pinch of salt and black to taste

4-lbs Whole Fish or Sliced Fish (Scaled and cleaned)
1- Teaspoon Fish Seasoning
1- Teaspoon Salt
1- Teaspoon Pepper
1- Scotch Bonnett Pepper
2- stalks of Scallion
2- Garlic Cloves Vegetable Oil for Frying (Enough to cover fish)
Clean fish with Vinegar and Lemon
BROWN STEW SAUCE
2 Tablespoon oil
1-Small Onion (Julienned)
1-Tomato (Chopped)
1/2-Green Sweet Pepper
1/2 -Red Sweet Pepper
4-Pieces of Scallion (Chopped)
4-Garlic Cloves (Crushed)
1-Scotch Bonnett
1⁄2- Teaspoon Ginger (Grated) or Ginger Paste
4-Sprigs Fresh Thyme
6-8 Pimento Seeds (Crush)
1-Large carrot (Peeled & Cut in Strips)
Okra (Optional)
1- Cup water or white Wine (I'm using Stone's Ginger Wine)
1- Tablespoon Green Seasoning
1-Teaspoon All Purpose Seasoning
1-Teaspoon Fish Seasoning
1⁄4-cup of ketchup
1-Tablespoon Sweet Chili Sauce (Optional, Red-Hot Brand)
1-Tablespoon Vinegar
1-Teaspoon Oyster Sauce or Soy sauce

Fried fish for 5 minutes on each side
Simmer down for 6 to 8 minutes
