Serbia, a landlocked balkanian country that connects Central, Eastern and Southern Europe. The capital of Serbia is Belgrade, one of the oldest cities in Europe. It can be found at conjunction of Danube and Sava River, provide an abundance of historical venues and cultural attractions to draw people’s attention wide across Europe. Hills, high mountains and plains characterize the country. Serbia is famous about its unique cities, old monasteries, archaeological sites, spas and ethno villages which are waiting for discovering. Describing the most notable fact about Serbia, there is no comparison of Serbian cuisine. It is so extraordinary. Its roots derived from the cultural effects of long centuries that were amalgamate the ancient Byzantine and Ottoman influences.
Serbian Cevapcici :
Cevapcici is one of the most typical Serbian food which has many varieties in the country but most of time the results are the same. Exaggerated flavor bomb.
Ingredients:
• 1 1⁄2 lbs ground pork
• 1 lb lean ground beef
• 1⁄2 lb ground lamb
• 1 egg white
• 4 garlic cloves, minced
• 1 teaspoon salt
• 1 teaspoon baking soda
• 2 teaspoons ground black pepper
• 1 teaspoon cayenne pepper
• 1⁄2 teaspoon paprika
• Olive oil
• 4 white breads or rolls
• Ajvar if you have
Instructions:
1st step: put all the meat and the egg in a huge bowl to mix.
2nd step: add all garlic, salt, baking soda, black pepper, paprika.
3rd step: add as much water to make the mixture smooth as it is needed.
4th step: divide the meat into 8-10 small pieces and form finger length sausages. Take the sausages to a plate, cover them and put them into a refrigerator about 1 or more hour in order to let the seasonings settle and make the mixture firm.
5th step: prepare the grill, warm it to medium heat. Pour some olive oil to the surface of the grill. Grill the cevapcici until it became golden and springy.

Homemade Bosnian ćevapčići/ Balkan kebab

The amount of the mentioned spices that should be added varies depending on the manufacturer and the personal taste of the one who prepares them. You can reduce the amount of garlic powder and add finely chopped garlic instead.
Composition; composition: minced veal shoulder 1kg, 20g salt, 3g pepper, 10g baking soda, 10g breadcrumbs and 8g garlic powder (or fresh garlic 3-4 cloves)
Watch out for the spices, which are not all the same depending on the manufacturer, however, it will not be difficult for you to determine the measurements and thus get your own recipe.
Kebabs can also be shaped by hand or by pressing with a stronger plastic bag. The pump shown can be found everywhere in hardware stores. at a price of about 12 KM/6 euros.
Shaping the salted meat mixture into the shown kuglofa form is done so that the mixture has air and thus the Ćevapi are softer.
Written prescription;
Use ground beef shoulder meat
Add 20 g of salt for every 1 kg of meat
VERY IMPORTANT Mix the mixture well
Then form the meat into a cake shape
Store at a temperature below 5 ˚C for 24 hours
Mix pepper, baking soda, breadcrumbs and garlic powder
Add the combined spices to the meat mixture and mix well
VERY IMPORTANT!! Mix well, making sure all ingredients are evenly distributed. NOTE: The meat mixture is mixed until it becomes a compact mass, it should be slightly moist and sticky
Put the mixture in the freezer for a couple of hours
I use a pump to form sausages, it can also be done manually
I use a plastic bag to fill the pump
Cut into finger-length sausages
If you prepare sausages this way, most of your equipment will stay clean
I use vegetable fat (butter) for frying.
Fry at a moderate temperature, turning constantly
Soak pita bread and serve with meat sausages
Serve with sour cream or Bosnian ajvar and red onion
A good appetite
Freeze the rest for later

Cevapcici (pronounced Che-Vah-Pchee-Chee) or Cevapi (pronounced Che-Vah-Pee) aside from being considered a national dish in Bosnia and Herzegovina is very popular throughout south east Europe but especially in the Balkan regions.
The dish itself consists of mixed minced meats seasoned with Garlic, Cayenne Pepper and Paprika combined and formed into sausage like shapes before being ideally grilled over charcoal but a griddle or pan works just as well. This simple dish is super for impressing your friends and family at a barbeque and as we’ve demonstrated can be served in the traditional way in a pitta bread or any flatbread, or as we’ve also shown, wrapped on a skewer similar to a kofte kebab.
They are served with Ajvar and Kajmak and both recipes are easy to prepare and the links are at the bottom. We have also added our Acar Timun which is our spicy cucumber pickle and the link for that is also at the bottom.
