CHALUPAS YUMMY! | How To Make The Best Beef Filled Chalupas ❤
These Chalupas are way up on my list of favorites, they are easy, unique, hearty and super delicious! they are a whole meal in one. whether filled with ground beef, shredded chicken, pork, beans they will amaze you. This was a favorite growing up, my mom fried them crispy, smeared beans on them and topped them with our favorite toppings, whether the tortilla was fried flat or folded like a boat it was always a winner. I love seasoning my ground beef with onions, diced tomatoes, roasted and diced Anaheim peppers, sweet paprika, onion and garlic powder, oregano and chopped cilantro, salt and pepper, this recipe is delicious and is sure to please everyone.

INGREDIENTS----------------
1 Lb. 80/20 ground beef
2 Roma tomatoes (diced)
2 diced Anaheim peppers (seeds and veins removed)
1/2 Diced onion
Chopped cilantro
2-3 large minced garlic cloves
1 tsp sweet paprika
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp Mexican oregano
Salt to your liking
Pepper to your liking
Chopped lettuce
Freshly grated Colby Jack cheese (as needed)
diced tomatoes (for topping)
Guacamole (or plain avocado slices)
Sour cream (as needed)
MY EVERYDAY SALSA (LINK BELOW)
1/2 C. water
DOUGH INGREDIENTS-------------------------
2 C. All purpose flour
2 tsp baking powder
3/4 tsp Salt
1 Tbsp shortening
3/4 C. milk

Guacamole 1 Tablespoon
Sour cream 1 Tablespoon
Salsa 1 Tablespoon
Bell pepper 1 Tablespoon, finely chopped
Olive 1 Tablespoon
Red onion 1 Tablespoon, finely chopped
Green onion 1 Tablespoon, finely chopped
Lettuce 1 Tablespoon, shredded

Directions
MAKING
1. Inside the chalupa spread refried beans, avocado guacamole, sour cream and salsa.
2. Scatter bell peppers, olives, red onions, green onion, lettuce and cheese.
SERVE
3. Fold it and serve or pack for lunch box.

Mexican Chalupa Recipe

Ingredients ⬇️
1 pound ground beef
1 ounce taco seasoning, TSRI taco seasoning mix
1/2 cup salsa
1/4 cup fresh cilantro, rough chop
8 corn tortillas
Kosher salt to taste
1 cup refried beans
Toppings of your choice: more salsa, cilantro, sour cream, guacamole, queso fresco
Vegetable oil for frying
Instructions ⬇️
In a heavy bottom skillet over medium-high heat brown the ground beef. Drain any excess fat or water off and add the taco seasoning, salsa, and fresh cilantro, mix until combined and cook 2 additional minutes stirring occasionally. Keep warm.
In a heavy bottom skillet over medium heat, add enough vegetable oil so it goes up the side of the skillet about 1/4th of an inch. Heat until the oil reaches a temperature between 325°F and 350°F. Carefully place the tortillas one by one into the hot oil, let fry for 2 minutes and flip, cook for an additional 2 minutes, or until golden brown. Tortillas will puff up. Drain well on a paper towel and immediately season each tortilla with a pinch of kosher salt. Continue to do this until all of the tortillas as cooked.
While you are frying the tortillas, heat the refried beans until warm, set aside until ready to assemble the chalupas.
To serve, add 2 tablespoons of the beans on the chalupa and smear it so it covers evenly. Top with the ground beef mixture and toppings of your choice! I like to add more salsa, fresh cilantro, sour cream, guacamole, and queso fresco to ours.
