COOK WITH ME: Nutty cherry berry breakfast bake recipe for Bright Line Eating
This is a simple and filling addition to your morning recipe arsenal on Bright Line Eating. The recipe is inspired by the “Orange Walnut Bake” recipe from Natalie Aul’s latest cookbook, linked below, but I modified it so significantly that it’s practically unrecognizable. My final version was delicious! Recipe I made up is below, followed by the cookbook link.
INGREDIENTS:
24 oz total bananas (at least 2 of them) and cherries and berries
4 oz oats
4 eggs
4 oz nuts (I used a few leftover walnuts but mostly macadamia nuts)
1 tsp each: baking soda, cinnamon and vanilla or almond extract
1 pinch of sea salt.
Combine all ingredients and put into a Pam-sprayed casserole dish. Bake at 350 degrees for 30 minutes. Divide into 4 servings.

Today I made a healthy yogurt parfait with macadamia nuts, pine nuts and fruits. This is a 5 minute breakfast! Healthy and Easy to make! Did you know that macadamia nuts are full of healthy fats, minerals and vitamins? They are a great source of antioxidants. I tried these macadamia nuts for the first time and loved them!
Pine nuts, blueberries, oranges and cherries are added to this healthy yogurt parfait. I simply made layers with fruits, nuts, yogurt and granola bar. I used non-fat plain Greek yogurt but you can use any yogurt you like!
This 5 minute breakfast is great on busy days when you don't want to cook. This yogurt parfait is great for a hot summer. The parfait is light, nutritious and refreshing.

Hi guys, today we're making a staple Hawaiian breakfast item: macadamia nut pancakes with a homemade coconut syrup. This dish was inspired by Desiree's trip to Hawaii and since we stuck at home during this period, we decided to bring Hawaii to us with these delicious and easy coconut macadamia nut pancakes.
Pancake ingredients:
1 1/2 cup of all purpose flour
3 1/2 teaspoons of baking powder
1 teaspoon of salt
1 tablespoon of white sugar
1 1/4 coconut milk
1 egg
3 tablespoons of butter
1/4 cup of macadamia nuts

1 cup of light corn syrup
2/3 cup of coconut milk
1 tablespoon cornstarch
1/4 cup of sugar
1 tablespoon of almond extract
1/4 cup of shredded coconut

Healthy Banana Pancakes that are only a few ingredients, dairy-free and gluten-free too. They are so easy to make and absolutely delicious. I am sure you have been seeing me enjoy them on my stories so I wanted to make a recipe video for you all. I nailed this version out of the few I tried and personally liked it the most. This recipe makes 7 mini pancakes or one portion so feel free to double or triple it. You will need:

1 ripe banana
1 large egg
pinch of salt
dash of pure vanilla bean paste or vanilla extract
1/3 cup oat flour — see notes below
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Please note: If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flower like consistency. I did use rolled oats the other day and I personally like this texture way more as it’s definitely more fluffy and less mushy.

In a bowl mix the first four ingredients and make sure your banana is nice and mashed. Add the oat flour and incorporate until you have a thick batter. In a pan on medium heat add some cooking spray and let it heat up a bit. I made mini pancakes because the smaller they are the better they will cook. Cook them on each side for 2-3 minutes or until golden. Enjoy with any toppings you love and follow for more.
